- 1 cup low-sodium chicken broth
- 4 cups shredded mild cheddar cheese
- 2 cups shredded sharp cheddar cheese
Spicy Jerk Vegetables with Yogurt-Scallion Sauce

- 1 3/4 cups extra-virgin olive oil
- 3 large portobello mushrooms— gills scraped out with a spoon, mushrooms thickly sliced
- 1 pound oyster mushrooms, thickly sliced
- 1/2 pound shiitake mushrooms, stemmed
- 1 fennel bulb, sliced 1/4 inch thick through the core
- 2 red bell peppers, quartered
- 1 1/2 pounds thin eggplant, sliced 1/2 inch thick
- 1 pound medium asparagus
- 8 whole scallions, plus 1/2 cup minced scallions
- 1 large sweet onion, sliced 1/2 inch thick

- 2 Tbl. Bacon drippings or butter
- 1 cup chopped onion
- 2 cloves garlic, minced
- 1 large whole boneless, skinless chicken breast, cut into 1/2-in. cubes (2 to 2 1/2 cups)
- 3 cups rich chicken broth
- 4 to 6 fresh green chilies, parched, peeled and coarsely chopped, or 1 cup canned or frozen green chilies, chopped
- 1 medium russet potato, unpeeled, diced
- 1/2 tsp. salt
