Jack Daniels & Ginger Gimlet

Syrup: Stir all ingredients in a sauce pan until sugar is dissolved over high heat
- 1 1/2 parts of Jack
- 1/2 part triple sec
- 1/2 part ginger infused simple syrum
- 1/4 fresh lime
- splash of soda water
- Ginger infused simple syrup
- 1 1/2 cups sugar
- 1 1/2 cup water
- 1 2x2 inch piece of ginger peed and thinly sliced
Ham Asparagus Strata

1. In greased 2-quart square baking dish spread half the muffin pieces
- 4 English muffins, torn or cut into bite-size pieces (4 cups)
- 2 cups cubed cooked ham (10 oz.)
- 2 cups cut-up fresh cooked asparagus or broccoli
- 4 oz. shredded Swiss cheese
- 4 eggs, beaten
- 1/4 cup dairy sour cream
- 1-1/4 cups milk
- 2 Tbsp. finely chopped onion
- 1 Tbsp. Dijon-style mustard

- Glaze:
- 2 eggs

- 1 tsp baking powder
- 1/8 tsp salt
- 7 oz 64% bittersweet chocolate chopped
- 3/4 cup sour cream
- 16 oz bittersweet chocolate, chopped

Hummingbird Bran Muffins

Preheat oven to 400 degrees
- 1 medium ripe banana
- 3/4 cup crushed pineapple with juice
- 1/2 cup plain nonfat or low-fat yogurt
- 1/3 cup agave nectar
- 2 eggs
- 1 teaspoon vanilla or coconut extract
- 1/3 cup coconut oil, melted
- 1/2 cup shredded coconut, unsweetened
- 2 cups wheat-bran flakes
- 3/4 cup unbleached all-purpose flour
- 1/2 cup whole-wheat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda

- 1/2 teaspoon dry mustard
- 1 teaspoon salt,
- 1 cup shredded gruyere

- 1 pound dry navy or soldier beans
- 1/3 cup molasses
- 1/3 cup apple cider vinegar
- 1 teaspoon dry mustard
- 1/2 cup dark brown sugar, firmly packed

- 1 large white onion, quartered
- 1/4 pound salt pork or slab bacon, cut into 1 1/2-inch chunks
