Smaller and spicier than their bell-pepper cousins, poblanos are good for stuffing
- 1 can(s) (28-ounce) whole tomatoes in puree
- 1 jalapeño chile, ribs and seeds removed, for less heat, minced
- 2 small onions, chopped
- 3 clove(s) garlic, 2 whole, 1 minced
- Coarse salt
- Ground pepper
- 1 can(s) (19-ounce) black beans, rinsed and drained
- 1/2 cup(s) yellow cornmeal
- 1 cup(s) shredded pepper Jack cheese
- 1 teaspoon(s) ground cumin
- 4 large poblano chiles, halved lengthwise, stems left intact, ribs and seeds removed

- Stuffing for Pasta:
- Frozen Spinach
- White Onions
- Ricotta Cheese
- Paramesan Cheese
- Cheddar Cheese
- Jack cheese
- Mozzarella Cheese
- 6 eggs
- Parsley
- Proscuitto
- Skin-on Chicken breasts.
Maine Shrimp Chimichanga

- 1 lb. fresh Maine Shrimp
- 1/2 cup green onions, sliced & diced
- 1/2 cup shredded Monterey Jack Cheese
- 1/2 cup shredded Sharp Cheddar Cheese
- 1/2 cup chopped fresh cilantro
- 1/2 cup diced fresh tomato
- 2 cup chopped fresh baby spinach
- Salt and pepper to taste
- 1/8 tsp. red pepper
