The Best Gingersnaps

In a bowl, sift together the flour, baking soda, cinnamon, ginger, cloves, nutmeg and salt
- 1 1/2 c. all purpose flour
- 1 1/4 tsp baking soda
- 1 1/2 tsp ground cinnamon
- 1/2 tsp. ground ginger
- 1/4 tsp. ground cloves
- 1/4 tsp. freshly ground nutmeg
- 1/8 tsp. salt
- 8 Tbs. (1 stick) unsaltd butter, at room temperature
- 2/3 c. sugar, plus about 5 Tbs. sugar for dusting tops
- 1/2 tsp. vanilla extract
- 1 egg yolk
- 1/4 c. molasses
Chinese Five Spice Shrimp Stir Fry with Sticky Rice

A classic seasoning, Chinese five spice lends sweet, tangy, bitter and savory flavors to this shrimp stir-fry
- 2 cups Thai sticky rice
- 2 egg whites
- 2 Tbs. cornstarch
- 1 tsp. freshly ground white pepper
- 1 tsp. salt
- 2 green onions, white and light green portions, minced
- 2 Tbs. peeled and minced fresh ginger
- 3 garlic cloves, minced
- 1 red Fresno chili or green jalapeño, seeded and minced
- 1 tsp. Chinese five spice
- 1/4 tsp. sugar
- 1/4 tsp. coarsely ground black pepper
- Canola oil for deep-frying, plus 2 Tbs.
- 1 1/2 lb. large shrimp, peeled and deveined
- 1 Tbs. Chinese rice wine, sake or sherry
Creole Tartar Sauce

Put the egg, garlic, lemon juice, parsley, onions, relish and mustard in a food processor and puree for 15 seconds
- 1 egg
- 1 tablespoon minced garlic
- 2 tablespoons fresh lemon juice
- 1 tablespoon chopped parsley
- 2 tablespoons minced onions
- 2 tablespoons pickle relish
- 1 tablespoon Dijon mustard
- 1 cup vegetable oil
- Salt
- Freshly ground black pepper

- 4 scallions, chopped
- 1/2 medium red bell pepper, finely chopped
- 1/3 cup(s) chopped fresh cilantro
- 2 tablespoon(s) chopped pickled jalapenos, (optional)
- 1 teaspoon(s) freshly grated orange zest
- 1 tablespoon(s) orange juice
- 8 ounce(s) pasteurized crabmeat, drained if necessary

- Blood Orange Syrup:
- 4 ounces blood orange juice (from 3 or 4 oranges)
- 8 ounces sugar
- pinch of salt
- If you cannot locate the blood organes, add a splash of cranberry juice to plain OJ.
- Chocolate Butter:
- 2 ounces butter, softened
- 3/4 ounce cocoa powder, sifted
- 1 teaspoon vanilla extract
- Champagne Waffles:
- 4 ounces all purpose flour
- 1/2 ounce sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 ounce melted butter or neutral flavored oil
- 1 egg
- 3/4 teaspoon rose flower water (optional, but don’t you want to feed your love roses?)
- 4 ounces champagne (Lest I suck all the romance right out, any sparkling beverage will work)
Hawaiian Roasted Pork

- 3 tablespoons Hawaiian or coarse salt

- 1 teaspoon of water, plus 1/2 cup
- 10 banana leaves, wet
- 1 stalk sugar cane, split in half lengthwise

- 1/2 cup dry white wine
- 1 3/4 cups canned crushed tomatoes in thick puree
- 3 cups canned low-sodium chicken broth or homemade stock
- 2 cups frozen baby lima beans (one 10-ounce package)
- 2 cups fresh (cut from about 3 ears) or frozen corn kernels
- 2 pounds catfish fillets, cut into 1 1/2-inch pieces
