Beer Beef Fajitas

Cooks in a crock pot
- 2 pounds beef round steak
- 2 packets (1.27-ounces each) fajita seasoning mix (recommended: Lawry's)
- 1 onion, thickly sliced
- 2 green bell peppers, sliced into 1/2-inch strips
- 1 red bell pepper, sliced into 1/2-inch strips
- 1/2 cup beer or water
Hamburger Potato Casserole

1. Preheat oven to 350 degrees F (175 degrees C)
- 1 pound lean ground beef
- 3 cups peeled and thinly sliced potatoes
- 1 (10.75 ounce) can condensed cream of mushroom soup
- 1/2 cup chopped onion
- 3/4 cup milk
- salt to taste
- freshly ground pepper, to taste
- 1 cup shredded Cheddar cheese
Paula Deen's Lime Mojitos

In a large pitcher, combine ice, sliced limes, and mint
- 4 c. crushed ice
- 3 limes, thinly sliced
- 1 c. fresh mint leaves
- 1 (12-oz) container frozen limeade concentrate, thawed
- 3/4 c. fresh lime juice
- 1/2 c. vodka
- 1/2 c. lime vodka
- 8 c. Sprite or 7-Up

Cream together margarine and sugar
- 1/2 lb. margarine
- 1 3/4 c. sugar
- 1 t. vanilla extract
- 5 eggs
- 2 c. flour
Poppy Seed Kolaches

1. Mix the first five ingredients and the lemon peel; cut in the butter until mixture is crumbly
- 3 c Flour
- 1/2 c Ground almonds
- 1 1/2 ts Baking powder
- 1/4 ts Salt
- 1/2 c Sugar
- 1 c Butter
- 1 Egg
- 1 tb Lemon juice
- 1 ts Grated lemon peel
- 2 tb Water

- 1/2 c Milk
- 1/4 c Honey
- 1/3 c Chopped dates
- 1/3 c Chopped nuts

Crunchy Pecan Chicken

1.Combine biscuit mix, seasonings and nuts
- 1 cup buttermilk baking mix
- 1/2 tsp. poultry seasoning
- 1/2 tsp. salt
- 1 tsp. paprika
- 1/2 cup chopped pecans
- 3 lb. chicken, cut up
- 1/2 cup evaporated milk
- 1/2 cup melted butter
Cola Roast

- 3 lbs. beef roast
- 1 envelope dry onion soup mix
- 2 cans cola
Mexican Quiche

This could be made for either breakfast or dinner
- 2 c. bisquick
- 2 eggs
- 1/2 c. milk
- 8 oz. sour cream
- 1 lb. shredded colby and monterey jack cheese
- 1 lb hot (breakfast) sausage
- 1 med onion, chopped
Kolaches

In a small bowl combine the yeast with the lukewarm water
- Kolache Dough
- 2 packages dry yeast
- 1/2 cup lukewarm water
- 1/4 cup unsalted butter, softened
- 1/4 cup vegetable shortening, preferably Crisco
- 1/4 cup plus 1 or 2 tablespoons sugar
- 2 egg yolks
- 2/3 cup milk
- 1 teaspoon salt
- 4 cups all-purpose flour
- melted butter, for topping
- 1 recipe creamy peach, prune, or poppy seed filling (see below)
Sour Cream Enchilladas

1. Cook ground beef and onion in a heavy skillet until brown; drain
- 1 lb ground beef
- 1/2 c. chopped onions
- 1 t. garlic powder
- 1 t. ground cumin
- 1/2 t. salt
- 1 T. chili powder
- 1 (10-3/4 oz) can cream of mushroom soup, undiluted
- 1/2 c. milk
- 1 (8-oz) carton sour cream
- 8 corn tortillas
- 2 c. shredded sharp cheddar cheese, divided
- 1 (2.2 oz) can sliced ripe olives, drained
