Liquid Cement

A fix-it recipe when your jam doesn't set
- 8 cups jam or jelly, un-set
- 1/2 cup lemon juice
- 1/2 cup liquid pectin (such as Certo)
Classic Italian Sausages (Vegan)

In a large bowl, squish tofu
- 3 star anise pods, slightly crushed
- 1 1/2 tablespoons sweet paprika
- 1/2 tablespoon cayenne pepper
- 1/2 tablespoon dried sage
- 1 teaspoon dried thyme
- 1 teaspoon dried savoury
- 1 teaspoon dried oregano
- 1 teaspoon dried tarragon (I use this to replace the fennel)
- 1/2 teaspoon sweet smoked paprika
- 1/2 teaspoon red pepper flakes (optional; though mine were still very mild sausages)
- In a mortar and pestle, crush the anise pods until they are mostly broken up. Add the remaining spices and crush until very fragrant. Set aside.
- Sausage Mixture
- 1 lb firm, or extra firm, tofu, crumbled very small
- 1 teaspoon salt
- 1/2 teaspoon cracked black pepper
- 2 tablespoons tamari
- 2 tablespoons red wine (optional; replace with a little water or stock if you need moisture)
- 1 small yellow onion, peeled and diced
- 4 garlic cloves, peeled and minced
- 1 medium carrot, peeled and shredded
- 2 inner stalks celery, diced
- 1/4 cup chopped sun-dried tomatoes or reconstituted dried wild mushroom (this is for extra chewiness)
- 1 tablespoon guar gum
- 1/3 cup corn flour (maize flour)
- 1/2 cup coarse cornmeal (polenta)
- 3 tablespoons nutritional yeast
- 1 tablespoon egg replacer mixed into 1/4 cup water
- ~ 2 tablespoons spice mixture
Butternut Squash Soup

Preheat oven to 425 degrees
- 1 butternut squash, halved and seeded
- 3 vine tomatoes
- 1 large red onion, peeled and halved
- 2 garlic bulbs, tops sliced off
- olive oil
- dried thyme
- 4 cups chicken stock
- salt and pepper
Kalamata Olive and Feta Vinaigrette

A tasty Mediterranean themed dressing with kalamata olives and feta along with red onion, honey and oregano
- 3 tablespoons extra virgin olive oil
- 3 tablespoons red wine vinegar or lemon juice
- 3 tablespoons kalamata olives, finely chopped
- 3 tablespoons feta, crumbled
- 2 tablespoons red onion, finely chopped
- 1 clove garlic, grated
- 1 tablespoon dijon mustard
- 1 tablespoon honey
- 1 teaspoon oregano
- salt and pepper to taste
Orzo Stuffed Tomatoes

Melt the butter ina saucepan and saute the onion in it until soft
- 1/2 pound orzo
- 6 large tomatoes, firm and ripe
- 1 teaspoon salt
- 1/2 tablespoon dried oregano
- 1/2 cup mozzarella cheese, cubed
- 4 tablespoons butter
- 1 onion, chopped
- 1 quart chicken stock
- 4 tablespoons parmesan cheese

- black pepper
Baileys Cheesecake Cookie Cups

Chocolate cookie cups filled with a chocolate Baileys cheesecake
- Chocolate Cookie Cups:
- 2 cups all-purpose flour
- 1/4 cup dutch-processed cocoa powder (sifted)
- 1/4 cup black cocoa (sifted)
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup unsalted butter (room temperature)
- 1/2 cup granulated sugar
- 1 cup packed light-brown sugar
- 2 large eggs (room temperature)
- 1 tsp pure vanilla extract
- Baileys Chocolate Cheesecake Filling:
- 1 cup heavy cream (chilled)
- 8 oz cream cheese (full fat, softened)
- 1/2 cup granulated sugar
- 2 oz semi-sweet chocolate (melted, cooled)
- 1/4 / cup Baileys Irish Cream
Tandoori Murgh Pakora (Batter-fried chicken)

Chicken Pakoras
- 1/2 kg boneless chicken breast, cut into 3 cm cubes
- oil (for deep frying)
- For the marinade
- 1/2 cup low-fat plain yogurt, beaten till smooth
- 1 teaspoon ginger, with
- 1 teaspoon garlic, in a paste
- 1 tablespoon lime juice
- 1 teaspoon mint paste
- For the batter
- 100 g gram flour (besan)
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons red chili powder
- 1 teaspoon mango powder (amchur)
- 1 teaspoon thyme (ajwain)
- 1/2 teaspoon garam masala powder
- 1/2 teaspoon tandoori color powder (if yu dont get this, use red food colouring, I use Bush Company's red food colour here)
- 1/2 teaspoon asafetida powder (hing)
- 3/4 cup water
- For garnishing

- 1 1/2 tablespoons curry powder
- 1 teaspoon salt
- 2 teaspoons olive oil
- 1/4 teaspoon ground coriander
- 31 ounces canned chick-peas
- 1 dash cooking spray
Mango Chutney

Combine all ingredients in saucepan and simmer, uncovered, for 45 minutes
- 1 medium mango, peeled & diced
- 1 tbsp sugar
- 1/2 c white wine vinegar
- 1/4 tsp cardamom
- 1/4 tsp dried ginger
- 1/4 tsp ground coriander
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/2 c minced green onions
- 1/4 c raisins
Chicken in Sour Cream Sauce

1. In a small bowl, combine the first four ingredients; rub over chicken
- 1-1/2 teaspoons salt
- 1/4 teaspoon pepper
- 1/4 teaspoon paprika
