- 1 1/2 cup white or basmati rice
- 1/2 tsp turmeric
- 1/2 tsp salt
- 1 tsp vegetable oil
- 1 1/2 cup water
- 3/4 cup coconut milk
- Beans:
- 1 1/2 cup diced onions
- 1 Tbsp vegetable oil
- 1/2 tsp red pepper flakes or 1 fresh chili, minced
- salt
- 1/2 tsp dried thyme
- 1/4 tsp allspice
- 1 can (28 oz) diced tomatoes
- 1 can (28 oz) red kidney beans, drained
- chopped scallions and/or cilantro
Grape Jam

Slip skins from 4 lbs. grapes and reserve
- 6 cups Grapes
- 1 box Certo Crystals
- 7 1/2 cups White Sugar

Blend until all mixed in the blender
- 1 1/2 cups Rye
- 300 milliliters sweetened condensed milk
- 250 milliliters half and half
- 2 eggs
- 1 teaspoon instant coffee

Rhubarb Lemonade Concentrate

- 3 cups water
- 3 cups sugar
- 4 cups rhubarb juice
- 3 Tbsp. lemon rind, grated

Honey Lemon Beets

In large pot of boiling salted water, cover and cook beets for about 40 minutes or until tender
- 8 small beets, (about 2 lb/1 kg)
- 1 tbsp (15 mL) butter
- 1 onion, sliced
- 2 tbsp (30 mL) liquid honey
- 2 tbsp (30 mL) lemon juice
- 1/2 tsp (2 mL) ground nutmeg
- 1/4 tsp (1 mL) salt
- 1/4 tsp (1 mL) pepper
No Bake Cheesecake

Combine graham cracker crumbs, brown sugar and butter
- CRUST
- 2 cups graham cracker crumbs
- 1/4 cup brown sugar
- 1/2 cup butter, melted
- FILLING
- 3 250gm cream cheese
- 3/4 cup icing sugar
- 3 boxes vanilla pudding mix (4 serving size)
- 3 cups milk
- 500 milliliters whipping cream
- TOPPING
- cherry pie filling, strawberries, raspberries or huckleberries

Break apart three large shredded wheat bundles into long strands so they have the appearance of hair, and set aside

- 1 Tbsp. light brown sugar

Preheat oven to 400° F. Spray a broiled pan with non-stick cooking spray

- 1 large egg
- 1/2 cup Panko bread crumbs
- 1/4 cup grated Parmesan cheese
- dried parsley flakes
- 1 package chicken tenders (sliced, boneless chicken breasts or tenders)
- salt
- optional: honey for dipping

In a food processor, process all ingredients together except the salt and pepper until blended and smooth
- 1/2 cup mayo
- 1 medium garlic clove, minced
- 1 Tbsp fresh lemon juice
- 1 Tbsp red wine vinegar
- 2 Tbsp olive oil
- 1 tsp. worcestershire sauce
- 2 Tbsp corn syrup (do not substitute)
- 1 1/2 tsp dried oregano
- 1 tsp dried parsley
- 1/4 cup crumbled feta cheese
- salt & pepper
