Curried Cabbage Salad

In a large bowl, toss together all ingredients, making sure cabbage is evenly coated
- 1 head green cabbage, chopped
- 1/3 cup shredded flaked coconut (be sure its raw, if needed)
- 2 tbsp lemon juice
- 1/4 cup cold-pressed olive oil
- 1/4 cup soy sauce (Nama Shoyu)
- 3 tbsp sesame seeds
- 1/2 tsp curry powder
- 2 stalks of scallions ( diced)
- 1/2 carrot, finely sliced
- a handful of Cashews
Taco/Nacho Meat

Heat oil in medium skillet over medium heat until hot and shimmering, but not smoking, about 2 minutes
- 2 tsp vegetable oil
- 1 small onion, chopped fine
- 1 large garlic clove, minced
- 1 Tbsp chili powder
- 1/4 tsp dried oregano
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1/4 tsp cayenne pepper
- 1/8 tsp salt
- 1/2 lb lean ground beef

- 1/2 cup tamari (or low-sodium soy sauce)
- 5 tablespoons brown sugar
- 6 garlic cloves, minced
- 1/2 teaspoon ginger
- 2 teaspoons rice vinegar
- Beef:
- 10 oz snow peas
- 4 tablespoons olive oil
- 10 oz mushrooms, sliced thinly
- 1 pound beef, thinly sliced (sirloin steak strips, flank steak, or any other steak)

Thai Butternut Squash Soup

Peel the squash, remove seeds and cut into large cubes together with the carrot
- 1 large butternut squash, peeled and cubed
- 1 onion, chopped
- 2 garlic cloves, chopped
- 1-2 tablespoon fresh ginger, chopped
- 2 carrots, peeled and cubed
- 1 mango (optional)
- 2 tablespoons oil
- 4 cups vegetable stock
- 1 (13 ounce) can coconut milk
- 2 teaspoons curry powder
- 2 stalks lemongrass, cut into large chunks
- 1 chili pepper, chopped

Bean Sprout Salad

Blanch snow peas in boiling water for about 1 minutes or until bright green
- 6 oz. snow peas, trimmed
- Boiling water
- Ice water
- 4 1/2 cups fresh bean sprouts
- 1 cup shredded cabbage, lightly packed
- 2 Tbsp. chopped pimiento
- SOY DRESSING
- 2 Tbsp. cooking oil
- 2 Tbsp. soy sauce
- 2 Tbsp. white vinegar
- 2 Tbsp. brown sugar, packed
Cooked Play Dough

Mix water and oil. Add flour, salt and cream of tartar, mix thoroughly

- 4 cups flour
- 1 teaspoon baking powder
- 1 teaspoon salt

Preheat the oven to 400 degrees F
- 1 pkg. phyllo pastry, thawed and wrapped in a damp dish towel
- vegetable oil, for brushing the pastries
- FILLING
- 3 large potatoes, boiled and roughly mashed
- 3/4 cup frozen peas, thawed
- 1/2 cup onion, diced fine
- 1 tsp. garlic, minced
- 1 tsp powdered ginger
- 2 tsp. garam marsala
- 1 tsp. turmeric
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon mango powder (amchur)
- 1 small onion, finely chopped
- 1 lemon, juice of

Southwestern Chopped Salad

Making the dressing: puree all ingredients in a food processor/blender until smooth
- Large head of romaine 15 oz.
- 1 can of black beans, rinsed and drained
- 1 large orange bell pepper
- 1 pint cherry tomatoes
- 2 cups corn (fresh or frozen, thawed)
- 5 green onions
- Optional: avocado
- Dressing
- 1 cup loosely packed cilantro, stems removed and roughly chopped
- 1/2 avocado (or 1/2 cup plain vegan yogurt or Greek yogurt)
- 2 Tbsp. fresh lime juice (about 1/2 lime), more to taste
- 1-2 garlic cloves
- 1/4 cup olive oil
- 1 1/2 tsp. white wine vinegar
- 1/8 tsp. salt
