Christmas Pudding

Put first 5 ingredients in a large bowl
- 1 cup sultanas
- 1 cup raisins
- 1 cup currents
- 70 grams blanched almond
- 150 grams mixed peel
- 1 cup suet, shredded
- 1 cup flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon mixed spice
- 1 teaspoon cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 1/2 cups soft bread crumbs
- 1 cup brown sugar
- 2 eggs
- 2 teaspoons lemon rind, grated
- 1/2 cup milk
- 1 tablespoon brandy
Paneer with Broccoli & Sesame

1.Trim the broccoli and boil or steam for 5-6 mins until tender but firm to the bite
- 200 g sprouting broccoli
- 1 tbsp vegetable oil
- 1 tsp cumin seed
- 1 tbsp sesame seeds
- 1 large green chilli, finely chopped
- 1/2 tsp brown mustard seeds
- 6 curry leaves
- 1 medium onion, sliced
- 140 g paneer cheese, cut into strips
- 1 tbsp grated ginger
- 2 garlic cloves, crushed
- 1 tsp lemon juice
- 1/2 tsp ground mace
Turkey Barley Stew

To serve in a round loaf of bread, carefully cut lid from top of bread with a sharp bread knife
- 2 tablespoons vegetable oil
- 2 onions, chopped
- 2/3 cup pearl or pot barley
- 2 cloves garlic, minced
- 2 each carrots and parsnips, peeled and sliced
- 1 1/2 cups rutabaga, peeled and cubed
- 2 1/2 cups broth
- 1 28 oz can diced tomatoes, undrained
- 1/4 cup chopped parsley
- 1 teaspoon each dried thyme and worcestershire sauce
- 1/2 teaspoon dried basil
- salt and pepper
- 2 cups turkey, cubed
- 1 1/2 cups green peas
Puloa Rice

- 1 1/2 Tbsp. ghee
- 1/2 tsp. cumin seeds
- 1 - 3 " cinnamon stick
- 4 cloves
- 2 bay leaves
- 1/2 cup red or green pepper diced
- 1 tsp. garlic paste
- 1 tsp. ginger paste
- green chili paste to taste
- 1/2 cup diced carrots
- 1/4 cup peas
- 1/2 cup basmati rice
Roasted Broccoli

1. Wash broccoli and cut into florets
- 1 Head of Fresh Broccoli ( or 3 cups frozen florets)
- 1/2 Green Spoon of Olive Oil
- 1/2 Lemon Juiced
- 1 tsp. Morton's Nature's Seasoning (or to taste) just salt/pepper if you don't have this.
Cheesy Garlic Tortilla Wedges

Garlic Butter: Combine melted butter, garlic, 1 tbsp (15 mL) of the parsley and pepper
- Garlic Butter:
- 4 Dempster’s® Cheesy Tortillas 10 in.
- 1/4 cup (60 mL) shredded mozzarella cheese
- 1/4 cup (60 mL) shredded aged white Cheddar cheese
- 1/4 cup (60 mL) grated Parmesan cheese
- 2 tbsp (30 mL) butter, melted
- 1 clove garlic, minced
- 2 tbsp (30 mL) fresh chopped fresh parsley
- Pinch freshly ground pepper
Chicken Stir Fry with Peanut Sauce

Coat a nonstick pan with cooking spray; sauté chicken over medium-high heat until cooked through
- Stir-fry
- Vegetable-oil cooking spray
- 6 oz boneless, skinless chicken breast, sliced
- 1 tsp sesame oil
- 2 cloves garlic, minced
- 1 tsp minced fresh ginger
- 3 1/2 cups your favorite vegetables, chopped
- Peanut sauce
- 1 1/2 tbsp peanut butter
- 1 tsp low-sodium soy sauce
- 1 tbsp rice vinegar
- Hot chile sauce (to taste)

Stuffed Italian Bread

Preheat the oven to 350 F
- 1 Italian loaf, about 12 inches long
- 1 stick butter, melted
- 1/8 cup olive oil
- 3 tsp minced onion
- 2-3 cloves garlic, grated
- 1 tbsp dijon mustard
- 1 tbsp poppy seeds
- 3 tsp chopped parsley (add more if you wish)
- 12 oz grated cheese (I used a mix of white cheddar and monterey jack.)
