Pasta with Peas or other vegetable

Pasta goes well with about any vegetable, like peas, or sun gold tomatoes.
Ingredients
- options:
- serving for two
- 6 oz of dry Pasta (3 oz per serving) - can be fettuccine, spaghetti or capellini.
- 3 oz of fresh or frozen peas
- 2 tablespoons of butter or olive oil
- 1 cup of pasta cooking water reserved.
- salt and pepper to taste.
- 1/2 to 3/4 cup of finely grated Cheese - Parmesan or Grana Padano, or Parmigiano Reggiano, or Pecorino (anything to your taste).

- cauliflower and caramelized onions
- mushrooms and thyme

Step 1
Cook pasta in a pot according to package directions. About 3 oz per serving. Cook to al dente. Reserve one cup pasta water.
In a 12 inch saute pan (fry)melt butter or oil and saute whatever vegetable you use until tender.
Add about 1/2 cup of pasta water, and simmer to create a sauce. Add the pasta to the vegetables and sauce and mix well, water will be absorbed by the pasta. Add more water if to dry. Cook about 2 minutes.
Remove saute pan from heat and stir in butter or olive oil and freshly grated cheese. Add herbs if using.
Mix vegetable and pasta well and serve.
