- 1 Pound of Firm or Extra Firm Tofu, rinsed
- 1/4 Cup Mirin
- 1/4 Cup Rice Vinegar
- 2 Tbsp Soy Sauce or Braggs
- 2 Tbsp Honey
- 2 Tbsp Ginger, minced
- 2 Tbsp Sesame Oil
- 1 Tsp Garlic, minced
- Sesame Seeds, for garnish

- 1 10 oz bag frozen, shelled, organic edamame, cooked as directed on package
- juice of 1 organic lemon
- 1 – 1 1/2 cloves organic garlic, roughly chopped
- 1/4 cup water
- 4 tbs organic olive (or sesame) oil

1. Heat the oil in a large saucepan over medium heat
- 1 Tbsp Oil
- 1 Small Onion, diced
- 1 Large Carrot, peeled and cut into a small dice
- 1 Garlic Clove
- 1 Tsp Fresh Ginger, minced
- 2 Tsp Curry Powder
- 1 Tsp Cumin
- 1 Tsp Turmeric
- 2 Cups Water
- 2 Tsp Salt
- 1 14 oz Can Tomato Puree
- 1 Cups Red Lentils, rinsed well
- Brown or White Basmati RIce

Preheat oven to 300°F. Line an 8x8-inch square pan with foil
- 1 cup whole raw almonds with skins
- 1/2 cup dried apricots
- 1/2 cup dates
- 1/2 cup prunes
- 1/4 cup orange juice
- 1/8 teaspoon salt
- 1/4 cup pepitas (raw pumpkin seeds)
- 1/4 cup raw sunflower seeds
vietnamese grilled pork with vermicelli

Mix the thinly sliced pork with the rest of the ingredients
- For the pork:
- 2 lbs. of pork shoulder, thinly sliced
- 8 cloves of garlic, minced
- 4 tbsn. sugar
- 5 tbsn. fish sauce
- 1/2 tsp ground black pepper
- For the sauce (also known as Nuoc Cham):
- 1/4 cup sugar
- the juice of 1 lemon
- 1/3 cup fish sauce
- 1/2 cup water
- 2 cloves of garlic, minced
- 1 carrot, thinly sliced or julienned (depending on your preference)
- 1 -2 tsp. chili paste, I used Sambal Oelek (pictured below)
- 1 package of rice vermicelli, also titled "Bean Thread"
- 1 head of butter lettuce
- 1 bunch of mint

- 1 large clove organic garlic
- 2/3 cup organic walnuts
- 1 12-oz jar organic, roasted sweet peppers
- 1/2 tsp smoked paprika OR 1 tsp regular, organic paprika
- 1 cup organic breadcrumbs
- 2 tbsp freshly squeezed organic lemon juice
- 2 tbsp organic sherry vinegar (or organic balsamic or double your lemon juice)
- 4 tbsp organic olive oil
- salt and pepper, optional

orange maple butter: Combine all three in a small bowl with a rubber spatula
- First up… make the Orange Maple Butter. (I did this the night before):
- 1 stick softened butter
- 1 tablespoon orange juice
- 1 tablespoon maple syrup
- pancakes:
- 1 cup all-purpose flour
- 1/2 cup cornmeal
- 1/4 cup sugar, plus two tsp for blueberries
- 1 1/4 tsp baking powder
- 1 tsp salt
- 1/2 tsp baking soda
- 1 1/2 cups buttermilk
- 1/4 cup milk
- 3 Tbsp butter, melted and cooled
- 1 egg lightly beaten
- 2 cups blueberries
- Extra butter for coating griddle
- Maple Syrup
- (Makes about 16)

1. Add the sugar, salt, vinegar and water to a large mixing bowl and stir to combine
- • 2 tablespoons sugar
- • 2 teaspoons kosher salt
- • ¼ cup rice vinegar
- • ¼ cup water
- • ½ pound carrots--peeled, cut in half lengthwise and thinly
- sliced
- • ½ pound red radishes, cut in half lengthwise and thinly
- sliced
