Mix the thinly sliced pork with the rest of the ingredients

  • For the pork:
  • 2 lbs. of pork shoulder, thinly sliced
  • 8 cloves of garlic, minced
  • 4 tbsn. sugar
  • 5 tbsn. fish sauce
  • 1/2 tsp ground black pepper
  • For the sauce (also known as Nuoc Cham):
  • 1/4 cup sugar
  • the juice of 1 lemon
  • 1/3 cup fish sauce
  • 1/2 cup water
  • 2 cloves of garlic, minced
  • 1 carrot, thinly sliced or julienned (depending on your preference)
  • 1 -2 tsp. chili paste, I used Sambal Oelek (pictured below)
  • 1 package of rice vermicelli, also titled "Bean Thread"
  • 1 head of butter lettuce
  • 1 bunch of mint
  • olive oil

  • 2/3 cup organic walnuts
  • 1 12-oz jar organic, roasted sweet peppers
  • 1/2 tsp smoked paprika OR 1 tsp regular, organic paprika

  • 2 tbsp freshly squeezed organic lemon juice
  • 2 tbsp organic sherry vinegar (or organic balsamic or double your lemon juice)

orange maple butter: Combine all three in a small bowl with a rubber spatula

  • First up… make the Orange Maple Butter. (I did this the night before):
  • 1 stick softened butter
  • 1 tablespoon orange juice
  • 1 tablespoon maple syrup
  • pancakes:
  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1/4 cup sugar, plus two tsp for blueberries
  • 1 1/4 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 1 1/2 cups buttermilk
  • 1/4 cup milk
  • 3 Tbsp butter, melted and cooled
  • 1 egg lightly beaten
  • 2 cups blueberries
  • Extra butter for coating griddle
  • Maple Syrup
  • (Makes about 16)
