- 8 c. water

- 1-1/2 c. sugar, or to taste
- 2 Tbs. fresh lime juice

1. Divide the vegetables between 2 16 oz
- 1 Lb. Vegetables ( I used carrots, lemon cucumbers, green beans and pickling cucumbers, but you could also use cauliflower, celery, green tomatoes, jalapenos or okra)

- 1 Tbsp Agave Nectar
- 1 Cup Distilled White Vinegar (you could also use champagne or white wine vinegar)

- 1 (12-ounce) can frozen apple or white grape fruit juice concentrate
- 2 1/4 cups wheat bran
- 1 cup (4 1/4 ounces) flour
- 3 1/4 teaspoons baking soda
- 3 1/2 teaspoons baking powder
- 1 1/2 teaspoons salt
- 2 1/4 cups buttermilk
- 1 cup plus 2 tablespoons canola oil
- 4 eggs, lightly beaten
- 1/2 cup sesame seeds
- 1/2 cup shelled pumpkin seeds
- 1/2 cup flaxseeds

1. Bring a large pot of lightly salted water to a boil to cook the macaroni
- 1 tablespoon butter
- 1 tablespoon flour
- 1 cup milk
- 1 cup heavy cream
- 2 to 4 tablespoons puréed canned chipotle peppers in adobo sauce (puréed using a food processor or blender), or to taste
- 1 pound grated medium cheddar cheese (about 5 cups), divided
- Salt and pepper

1. score the ham hock. brown up the ham hock
- 1 lb dried split peas
- 1 ham hock
- 3 T unsalted butter
- 1 c finely chopped yellow onion
- 1/2 c finely chopped celery
- 1/2 c finely chopped carrot
- 2 tsp minced garlic
- 1 tsp salt
- 3/4 tsp freshly ground black pepper

1. Place rice in a strainer and rinse well
- Suggested Fillings (feel free to make up your own):
- 3 Cups Rice
- 3 Cups Water
- 3 Tbsp Vinegar (I use rice vinegar)
- 1 Tbsp Agave Nectar
- 1 Tsp Salt
- Cucumber, peeled and cut into matchsticks
- Carrots, peeled and cut into matchsticks
- Red Bell Pepper, cut into matchsticks
- Avocado, cut into strips
- Cooked Crab Meat
- Cooked Shrimp, halved
- Sesame Seeds
- 8-10 Nori Seaweed Sheets
- Soy Sauce (I use low sodium)

For the kale: Saute the kale in a tablespoon or two of extra virgin olive oil for about 10 minutes over medium heat
- For the Veggies:
- 2 cups marinara sauce
- Polenta (recipe follows)
- Sautéed veggies (recipe follows)
- 1/2 cup grated Parmesan
- 1/2 pound fresh mozzarella, thinly sliced
- Ricotta mixture (recipe follows)
- 3 large kale leaves, chopped (or substitute fresh or frozen spinach)
- 8 oz sliced mushrooms
- 2 large cloves garlic
- ¼ tsp crushed red pepper
- For the ricotta mixture:
- 1/3 cup fresh ricotta cheese
- 1 egg yolk
- 1/8 teaspoon freshly grated nutmeg
- For the polenta:
- 10 cups water
- 1 tablespoon gray salt
- 2 teaspoons extra virgin olive oil
- 2 cups fine grind polenta
- 1-1/3 cups grated Parmesan cheese

1. Set the bread cubes on a large baking sheet overnight to dry out
- 1 (1-pound) loaf brioche bread, cut into 1-inch cubes (about 10 cups)
- 6 1/2 ounces dark chocolate, preferably Callebeaut
- 2 3/4 cups heavy cream
- 3/4 cup whole milk
- 1 2/3 cups sugar
- 1 vanilla bean, split and scraped
- 10 egg yolks
- Butter for greasing the loaf pan
- Whipped cream, for garnish
- Mint sprigs, for garnish
