- 1/4 cup Old Bay seasoning
- 2 pounds unpeeled, medium-size fresh shrimp
- 1/2 cup finely chopped celery
- 1/3 cup finely chopped onion
- 1/3 cup light mayonnaise
- 2 tablespoons lemon juice
- 3/4 teaspoon Old Bay seasoning
- 1/4 teaspoon seasoned pepper
- 8 green leaf lettuce leaves (optional)
- Assorted crackers (optional)
Cinnamon Itty Bitty Buns

Preheat over to 425. Roll out Biscuit dough, spread with margarine and sprinkle with cinnamon sugar mixture
- Filling:
- 1 1
- can biscuits
- Margarine
- Cinnamon
- 1/2 white and brown sugar
- Icing:
- 2 1/2 2 1/2
- cups powdered sugar
- 1/4 1/4
- cup milk
- 1 1
- teaspoon margarine

Super Nachos (Rachel Ray)

Arrange a mixture of 2 varieties of corn chips on a very large platter or use your broiler pan as a platter
- Pico de Gallo Salsa:
- 2 bags corn tortilla chips in 2 colors or different flavors, such as blue corn, red corn, yellow corn, lime flavored, chili flavored or black bean chips -- pick 2 favorites
- 4 vine ripe tomatoes, seeded and chopped
- 1 jalapeno pepper, seeded and finely chopped, for medium to hot heat level
- 1 small white onion, chopped
- 1/4 cup, 2 handfuls, cilantro leaves, finely chopped -- substitute parsley if cilantro is not to your liking
- Salt
- Beef and Beans Topping:
- 1 tablespoon extra-virgin olive oil
- 1 pound ground sirloin
- 2 cloves garlic, chopped
- 1 small onion, chopped
- 1 jalapeno pepper, seeded and chopped
- 1 teaspoon salt
- 1 1/2 teaspoons dark chili powder
- 1 1/2 ground cumin, half a palmful
- 2 teaspoons to 1 tablespoon cayenne pepper sauce, giving you medium to hot heat level
- 1 can black beans, 15 ounces, drained
- Cheese Sauce:
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups milk
- 3/4 pound pepper jack cheese, shredded, about 2 1/2 cups
- Additional toppings to choose from, optional:
- Sour cream
- Chopped scallions
- Chopped black olives
- Diced pimento
- Sliced avocado, dressed with lemon juice

Deviled Eggs

1. Boil eggs in water for 10 minutes - Cool
- 6 Hard-boiled eggs
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. dry mustard
- 3 Tablespoon Mayonnaise (enough to moisten)
- 1/2 tsp. Apple Cider or White Vinegar
- Paprika
Roasted Red Pepper and Goat Cheese Pasta Alfredo

1.Cook the pasta as directed on the package
- 1/2 pound pasta
- 2 tablespoons butter
- 1 clove garlic, grated
- 1/2 cup heavy cream
- 4 ounces goat cheese
- 1/4 cup parmigiano reggiano (parmesan), grated
- 2 roasted red peppers, coarsely chopped
- salt and pepper to taste
- 1 handful basil
Creamy Whole Grain Mustard and Dill Sauce (for Chicken)

After removing chicken from the skillet, add shallot and 1/4 tsp salt to the oil left in skillet
- 1 medium shallot (about 3 TB)
- 2 cloves garlic, minced
- 1/4 dry white wine
- 1 1/2 cups low-sodium chicken broth
- 3 TB light cream cheese
- 1/4 cup whole grain mustard
- 1 TB minced fresh dill
- ground black pepper
Slow Cooker Buffalo Chicken

Put frozen chicken, wing sauce, onion, garlic, honey, andb ranch dip mix into crock pot
- 3 lb. bag of frozen chicken breasts
- 1 bottle Frank's Wings Buffalo Sauce
- 1 packet Ranch Dip
- 1 small onion, minced
- 2 cloves garlic, minced
- 1 TB honey (optional)
- 2 TB butter
- 1/2 cup water (optional - if sauce is too strong/spicy)
- 2 oz. Crumbled Blue Cheese
- Blue Cheese Dressing
- Celery Sticks
Kimberly's Greek Pasta Salad

- 10 oz (mini/mezze)Penne Pasta
- 1/2 pint -Grape or Cherry Tomatoes, halved
- 1/2 small Red Onion, thinly sliced & quartered
- 1/2 Green Pepper, chopped
- 2 oz. Feta Cheese
- 1/2 cup Black Kalamata olives, pitted and chopped
- 1 clove garlic, minced
- Dried Oregano, sprinkle to taste
- S & P to taste
- Greek Dressing (I use Ken's Steakhouse )or Italian Vinagrette
- Parmesan Cheese
Hot Artichoke Dip

- 3/4 can of artichokes, chopped
- 2 cloves garlic, crushed
- Italian Cheese Blend, shredded
