- 2-3 8 oz blocks of cream cheese, softened
- 2-3 boneless chicken breasts
- 1/2 bottle Franks Red Hot Sauce
- 8 oz bag shredded sharp cheddar cheese

- 1/2 cup flaked sweetened coconut
- 1/2 cup panko (Japanese breadcrumbs)
- 1/3 cup cornstarch
- 3 large egg whites, lightly beaten
- 1/2 teaspoon salt
- 8 teaspoons canola oil, divided
- Cooking spray
- Maui Mustard Sauce
- 1/3 cup pineapple preserves
- 1/3 cup apricot preserves
- 1/4 cup stone-ground mustard
