Bacon-Wrapped Filet Mignon with Blue Cheese Herb Butter

Made for NYE Dinner 2010 along with Shredded Bacon Brussel Sprouts
- Blue Cheese Shallot Butter:
- 4 (4-ounce) filet mignon steaks
- Kosher salt and freshly ground black pepper
- 3 tablespoons olive oil
- 8 thick-sliced Bacon strips
- 4 tablespoons unsalted butter, at room temperature
- 2 tablespoons chopped shallots
- 2 tablespoons crumbled creamy blue cheese
- 2 teaspoons chopped fresh parsley
Pimento Cheese Ball

Combine the cream cheese and Cheddar cheese in a bowl; use your hands to mix together
- Optional:
- 2 (8 ounce) packages cream cheese, softened
- 2 cups shredded Cheddar cheese
- 2 TB Mayo
- 1 (2 oz) jar pimento, finely chopped
- 2 tablespoons Worcestershire sauce
- 2 TB Onion, minced
- 1/8 tsp cayenne pepper
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- (may need to adjust measurement on seasonings)
- Add Bacon
- Roll in either crushed pecans or finely chopped parsley
Tequila-Watermelon Refresco

Place watermelon in a blender; process until smooth
- 5 1/2 cups chopped seeded watermelon
- 3/4 cup tequila
- 6 tablespoons Triple Sec (orange-flavored liqueur)
- 5 tablespoons fresh lime juice
- 1/4 teaspoon salt
- 2 1/4 cups club soda, chilled
- 6 lime wedges
The Best Macaroni Salad

Variation of Mama Mia's Macaroni salad (from The Shed Restaurant)
- 2 cups uncooked shells or Elbow Macaroni
- 1 cup Hellmans Light Mayonnaise
- 1/2 cup Light Sour Cream
- 2 TB Cider Vinegar
- 1-2 TB Sugar (depending on how sweet you like it)
- 1 tablespoon dijon mustard
- 1/2 teaspoon pepper
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1 teaspoon garlic salt
- 1/2 cup chopped green pepper
- 1/2 cup chopped red pepper
- 1/2 chopped red onion
- 2 Boiled eggs, chopped (optional)
- 1/2 cup shredded sharp cheddar cheese

Herbed Goat Cheese Melon Party Bites

Cut half of watermelon into 1-inch-thick slices
- 1 small seedless watermelon
- 1 (4-oz.) goat cheese log, softened
- 2 tablespoons chopped fresh basil
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- Garnishes: fresh basil and freshly ground pepper
Red Pepper Mayonnaise

Process mayonnaise, garlic, and roasted red bell pepper in a mini food processor until smooth
- 1/3 cup mayonnaise
- 1 small garlic clove, pressed
- 1/3 cup jarred roasted red bell pepper, drained
Peppermint Chocolate Cookies

I made these for 2009 Cookie Exchange - very yummy! Taste like "Thin Mints"
- 1 (16.5 ounce) tube refrigerated sugar cookie dough
- 1/4 cup all-purpose flour plus extra for dusting
- 2 cups semisweet chocolate chips, divided
- 1/4 cup light cream
- 3/4 to 1 teaspoon pure peppermint extract (depending how strong you want the peppermint flavor) – Iuse 3/4 tsp.
- 1 teaspoon vegetable oil
- Crushed candy canes or peppermint candies
Steakhouse Shepard's Pie (Rachael Ray)

- 1 pound Idaho potatoes, peeled and cut into chunks
- Salt
- 1/4 tablespoons extra-virgin olive oil
- 2 slices good quality bacon or peppered bacon, chopped
- 1 pound ground sirloin
- 1/2 onion, chopped
- 4 oz button mushrooms, quartered
- Black pepper
- 1 tablespoon butter
- 1 tablespoon all-purpose flour
- 3/4 cup beef stock
- 1 tablespoon Worcestershire sauce
- 1/2 egg yolk
- 3 tablespoons sour cream
