  • Blue Cheese Shallot Butter:
  • 4 (4-ounce) filet mignon steaks
  • Kosher salt and freshly ground black pepper
  • 3 tablespoons olive oil
  • 8 thick-sliced Bacon strips
  • 4 tablespoons unsalted butter, at room temperature
  • 2 tablespoons chopped shallots
  • 2 tablespoons crumbled creamy blue cheese
  • 2 teaspoons chopped fresh parsley

Combine the cream cheese and Cheddar cheese in a bowl; use your hands to mix together

  • Optional:
  • 2 (8 ounce) packages cream cheese, softened
  • 2 cups shredded Cheddar cheese
  • 2 TB Mayo
  • 1 (2 oz) jar pimento, finely chopped
  • 2 tablespoons Worcestershire sauce
  • 2 TB Onion, minced
  • 1/8 tsp cayenne pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • (may need to adjust measurement on seasonings)
  • Add Bacon
  • Roll in either crushed pecans or finely chopped parsley
