Cheesy Roasted Cauliflower

Heat oven to 450 Combine cauliflower and garlic in a large bowl
- 1 med head of cauliflower, trimmed and cut into florets
- 3 large cloves of garlic, minced
- 1/4 c olive oil
- 2 T lemon juice
- 1/2 t salt
- 1/4 t black pepper
- 2 T grated Parmesan cheese
Cappuccino Flats

IN a small heavy saucepan heat and stir unsweetened chocolate till melted
- 2 squares unsweetened chocolate
- 2 cups flour
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup shortening
- 1/2 cup butter or margarine
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 1 tablespoon instant coffee
- 1 teaspoon water
- 1 each egg
- 1 1/2 cups semisweet chocolate chips
- 3 tablespoons shortening
Caramel Apple Bread Pudding (skinny)

In a large bowl, combine the applesauce, milk, brown sugar, egg substitute, vanilla and cinnamon
- 1 c unsweetened applesauce
- 1 c fat free milk
- 1/2 c packed brown sugar
- 1/2 c egg substitute
- 1 t vanilla extract
- 1/2 t cinnamon
- 5 c cubed day old bread
- 1/2 c chopped peeled apple
- 1/2 c fat free whipped topping
- 1/2 c fat free caramel ice cream topping
Potato Egg Bake (skinny)

Place potatoes and water in a microwave safe dish
- 2 lbs Yukon gold potatoes about 6 medium, peeled and diced
- 1/2 c water
- 1 c frozen chopped broccoli, thawed
- 6 green onions, thinly sliced
- 1 small sweet red pepper, chopped
- 6 eggs
- 8 egg whites
- 1 c 1% cottage cheese
- 1 c shredded reduced fat cheddar cheese
- 1/2 c parmesan cheese
- 1/2 c fat free milk
- 2 T dried parsley flakes
- 1/2 t salt
- 1/4 t pepper
Granola (Mary Behrendt)

This is an awesome granola
- 3 c rolled oats
- 1 c slivered almonds
- 1 c pecans
- 3/4 c shredded sweet coconut (optional, I leave out)
- 1/4 c plus 2 T dark brown sugar or sugar substitute (I leave out)
- 1/4 c plus 2 T real maple syrup (I add more to make up for brown sugar)
- 1/4 c vegetable oil
- 3/4 t salt
- 1 c raisins
- shake cinnamon over mix before putting in the oven
- (I use cranberries, dried fruits and I use more nuts then above)
Cheesy Ham Chowder

In a Dutch oven, cook the bacon over med heat until crisp
- 10 bacon strips, no nitrates or nitrites
- 1 large onion, chopped
- 1 c diced carrots
- 3 T flour
- 3 c milk
- 1 1/2 c water
- 2 1/2 c cubed potatoes
- 1 can 15 oz corn, drained
- 2 t chicken bouillon granules
- pepper to taste
- 3 c shredded mild cheddar or American cheese
- 2 c cubed fully cooked ham
Caprese Wraps with Chicken

Combine first four ingredients in a bowl, stirring with a whisk
- 2 T olive oil
- 2 T white wine vinegar
- 1/4 t kosher salt
- 1/4 t black pepper
- 4 c prechopped hearts of romaine lettuce
- 1 1/2 c shredded skinless, boneless, rotisserie chicken breast
- 3/4 c fresh mozzarella cheese chopped
- 1/2 c fresh basil leaves torn
- 1 pint cherry tomatoes quartered
- cooking spray
- 4 multigrain (2.8oz) flatbreads
- 1 large garlic clove halved
Crunchy Streusel Zucchini Bread

Grease and flour two 8-inch x 4-inch baking pans (standard size loaf pans)
- For the Streusel:
- 3 large eggs
- 1 cup canola oil (or vegetable oil)
- 3/4 cup granulated sugar
- 2 tsp vanilla extract
- 1 tsp almond extract
- 3 cup all-purpose flour
- 1 tsp kosher salt
- 1 tsp baking powder
- 1 tsp baking soda
- 1 Tbsp cinnamon
- 2 cup shredded zucchini
- 1 cup chopped walnuts
- 1/4 cup unsalted butter, softened
- 1/2 cup quick oats
- 1/2 cup light brown sugar, packed
- 1/4 all-purpose flour
- 1/2 tsp cinnamon

- 4 pounds roast
- 1 can cream of mushroom soup
- 1 envelope dry onion soup mix
- 16 ounces cola

PREHEAT oven to 350. Grease 13x9 baking pan
- 1 3/4 cups flour, sifted
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 cup butter, softened
- 1 1/2 cups firmly packed brown sugar
- 1/2 cup sugar
- 2 each eggs
- 2 teaspoons instant coffee granules or espresso
- powder, dissolved in 1T hot water
- and cooled to room temp
- 2 teaspoons vanilla
- 1 teaspoon grated orange peel(optional)
- 1 cup white chocolate chips
- 1 cup chocolate covered toffee bits
