Chocolate Crepes with Raspberry Sauce

In a small bowl, combine the milk, evaporated milk, egg whites and egg
- 1 cup fat-free milk
- 1/2 cup fat-free evaporated milk
- 2 egg whites
- 1 egg
- 1 cup all-purpose flour
- 1/4 cup plus 1/3 cup sugar, divided
- 1/4 cup baking cocoa
- 1/2 teaspoon salt
- 4-1/2 teaspoons cornstarch
- 1 cup water
- 4-1/2 cups fresh or frozen raspberries, thawed, divided
- Reduced-fat whipped cream in a can
- 1 teaspoon confectioners' sugar
Shiitake Angel Hair Pasta

1.Saute garlic and onion in olive oil over medium heat; add mushrooms as the aroma develops
- 6 ounces angel hair pasta
- 6 ounces fresh sliced shiitake mushrooms
- 1 clove garlic, minced
- 1/2 onion, chopped
- 1/4 cup white wine
- 1 tablespoon olive oil
- 1/4 cup chicken broth
- 1/2 cup heavy whipping cream
- salt to taste
- ground black pepper to taste
- 2 tablespoons grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
Romano Chicken Supreme

In a large skillet coated with cooking spray, brown chicken on both sides over medium heat
- 6 boneless skinless chicken breast halves (5 ounces each)
- 1/4 teaspoon salt
- 1 pound fresh mushrooms, chopped
- 1 tablespoon lemon juice
- 1 teaspoon dried basil
- 2 garlic cloves, minced
- 3 tablespoons butter
- 1/2 cup reduced-sodium chicken broth
- 2 tablespoons orange juice
- 1 cup soft bread crumbs
- 1/3 cup grated Romano cheese
Steak Tortillas

In a large nonstick skillet, saute steak and onion for 1 minute
- 2 cups thinly sliced cooked beef ribeye or sirloin steak (about 3/4 pound)
- 1 small onion, chopped
- 1/4 cup salsa
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon garlic powder
- 1-1/2 teaspoons all-purpose flour
- 1/2 cup cold water
- 6 flour tortillas (8 inches), warmed
- Shredded cheese, chopped lettuce and tomatoes and additional salsa, optional
Shrimp Piccata Pasta

- 2 shallots, chopped

- 2 cans (15 ounces each) black beans, rinsed and drained
- 1 can (14-1/2 ounces) reduced-sodium chicken broth
- 1 can (14-1/2 ounces) diced tomatoes with mild green chilies, undrained
- 1/2 pound boneless skinless chicken breast
- 1 jar (8 ounces) chunky salsa
- 1 cup frozen corn
- 1 tablespoon dried parsley flakes
- 1 teaspoon ground cumin
- 1/4 teaspoon pepper
- 3 cups hot cooked rice OR tortilla chips

- Filling:
- 1/2 onion, chopped
- 3 tbsp butter
- loaf white bread, decrusted and hardened
- 1.5 top sirloin, thin and pounded
- 1/2 can chicken broth
- 1/2 C pine nuts
- 1/3 C raisins
- 1 tbsp parsley
- 1/4 C milk
- 1 egg
- Sauce:
- olive oil to coat bottom of pan
- 2-3 garlic cloves, minced
- 2 can tomato sauce
- 1/8 tsp red pepper
- 1 tsp bail
- 1 tsp parsley
Grilled Pork with Avocado Salsa

- SALSA:
- 1/2 cup chopped sweet onion
- 1/2 cup lime juice
- 1/4 cup chopped seeded jalapeno peppers
- 2 tablespoons Crisco® Pure Olive Oil
- 4 teaspoons ground cumin
- 2 pork tenderloins (3/4 pound each), cut into 3/4-inch slices
- 2 medium ripe avocados, peeled and chopped
- 2 plum tomatoes, seeded and chopped
- 1 small cucumber, seeded and chopped
- 2 green onions, chopped
- 2 tablespoons minced fresh cilantro
- 1 tablespoon honey
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 3 tablespoons jalapeno pepper jelly
