Pineapple Upside-down Cupcakes

Preheat oven to 350. Line greased jumbo muffin cups with waxed paper; grease the paper and set aside
- 6 tbsp butter, cubed
- 1 c packed light brown sugar
- 2 tbsp light corn syrup
- 1 small pineapple, peeled, cored, and cut into 1/2 in slices
- 12 maraschino cherries, well drained
- 3 eggs
- 2 c sugar
- 1 c vegetable oil
- 1 c (8oz) sour cream
- 2 tsp vanilla extract
- 2-1/2 c all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- whipped topping optional
Seafood Ceviche

1. In 3-puart saucepan, heat 8 c water to boiling
- 1/2 lb uncooked med shrimp, thawed if frozen, peeled (tail shells removed), deveined
- 1/2 lb sliced calamari, thawed if frozen
- 1/2 lb scallops, thawed if frozen
- 1 c diced red onion
- 1 c chipped fresh cilantro
- 1 tbsp finely chopped garlic
- 1 jalapeno chile, seeded, chopped, if desired
- 3 tbsp olive oil
- juice of 1 orange (about 1/3 c)
- juice of 1 lemmon (about 1/4 c)
- juice of 1 lime (about 3 tbsp)
- 1/2 tsp salt
- 1/4 tsp pepper
Peppersteak

- egg noodles
- 1 big can mushrooms
- 1 tsp beef bullion
- 1 lbs. stir fry meat
- 1/2 stick butter
- 1/4 C sherry
Onion, Garlic & Brie Bruschetta Recipe

Remove papery outer skin from garlic (do not peel or separate cloves)
- 2 whole garlic bulbs
- 3 tablespoons olive oil, divided
- 1 large red onion, halved and thinly sliced
- 4-1/2 teaspoons sugar
- 1 teaspoon balsamic vinegar
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 French bread baguette (10-1/2 ounces), cut into scant 1/2-in. slices
- 1 pound Brie cheese, rind removed, thinly sliced
- Minced fresh thyme, optional
Praline Chocolate Dessert

Preheat oven to 350. In a small bowl, combine cookie crumbs and butter
- Praline:
- 2 c cream-filled chocolate sandwich cookie crumbs
- 1/2 c butter, melted
- 1 c chopped pecans
- 1-1/2 c butter, cubed
- 1 c packed brown sugar
- 1 tsp vanilla extract
- Filling:
- 2 packages (8 oz each) cream cheese, softened
- 1/2 c confectioners' sugar
- 1/3 c packed brown sugar
- Ganache:
- 1 c (6oz) semisweet chocolate chips
- 1/2 c heavy whipping cream pecan halves
Walnut Pear Coffee Cake

Preheat oven to 350. In a bowl, combine walnuts, brown sugar and cinnamon; set aside
- Filling:
- 1 c chopped walnuts
- 1/3 c packed brown sugar
- 1 tsp ground cinnamon
- 1/3 c all-purpose flour
- 1/4 c cold butter
- 2 med ripe pears, peeled and sliced (about 2 cups)
- 2 tsp lemon juice
- 1/2 c butter softened
- 1 c sugar
- 2 eggs
- 1 tsp vanilla extract
- 1-3/4 c all-puropse flour
- 3/4 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 c (8oz) sour cream
- 1/2 c chopped walnuts
Pear Walnut Chicken

Drain pears, reserving juice in a 1-cup measuring cup
- 1 can (15-1/4 ounces) sliced pears
- 1/2 cup unsweetened apple juice
- 1/4 cup packed brown sugar
- 3 tablespoons soy sauce
- 1/2 teaspoon garlic powder
- 1-1/2 pounds boneless skinless chicken breasts, cut into 1-inch cubes
- 3 tablespoons canola oil
- 2 tablespoons minced fresh parsley
- 2 tablespoons cornstarch
- 1/4 cup cold water
- 1/2 cup chopped walnuts
- Hot cooked rice, optional
Pecan Pie

Spray two pie dishes with Pam
- MAKES 2 PIES...cut in half for one
- 2 premade pie crusts
- 6 eggs, beaten
- 1 stick butter, very soft
- 1 C sugar
- 2 C white karo syrup (16 oz)
- 1 tbsp vanilla
- 2 C whole pecans
Bow Ties with Peas

Cook pasta according to directions
- bow tie pasta
- 3 tbsp butter
- 4 C mushrooms, sliced
- 1/2 lb prosciutto
- 1 C frozen peas
- 1 pint whipping cream (just use 3/4)
Dessert Pizza

- 1 package refrigerated suagr cookie dough
- 8 oz. cream cheese, soft
- 1/3 C sugar
- 4 C fresh fruit, sliced
- strawberries, bananas, blueberries, kiwi, raspberry, blackberries, etc.
