Drain any liquid from potatoes
- 6 large potatoes, grated
- 1 large onion, grated
- 2 eggs, beaten
- 2 T flour
- 1 t salt
- pinch pepper
- 4 T olive oil, or other veggie oil

In large bowl, beat sugar and butter until light and fluffy
- 1/2 cup sugar
- 1/2 cup butter, softened
- 1 T milk
- 1 t vanilla
- 1 egg
- 1 1/4 cups flour
- 1 t cream of tartar
- 1/2 t baking soda
- 1/4 t salt
- powdered sugar
- 1/2 cherry or red currant jelly
Potato Latkes

Beat eggs and add the next 5 ingredients
- 2 eggs
- 3 cups potatoes, grated and drained
- 4 T onion, grated
- 1 t salt
- 1/4 t pepper
- 2 T cracker or matzo meal
- 1/2 cup fat, butter or oil
Niffey's Shrimp Scampi

Lightly dust shrimp with flour and herbs
- Sauce:
- shrimp peeled and deveined
- Wondra Flour
- herbs of choice
- olive oil
- butter
- garlic, minced
- chicken broth
- sherry
- splash of worstershire
- salt and pepper to taste
Caesar Salad

Croutons can be made by cutting up a seeded baguette and rubbing with garlic clove then toasting
- Dressing:
- Romaine lettuce
- parmesan cheese
- croutons
- 1/2 cup olive oil
- juice of one lemon
- worcestershire sauce (count to 10 as it drips)
- 1 T dijon mustard
- 1/3-1/2 tube anchovy paste
- 1 garlic clove, minced
Mixed Greens and Apples with Hot Cider Dressing

Cook bacon in heavy large skillet until crisp
- Salad:
- 3/4 lb thin bacon slices
- 1/3 cup vegetable oil
- 8 large shallots, thinly sliced
- 3 cups unsweetened apple cider, boiled until reduced to 1/3 cup
- 3 T cider vinegar
- 2 t golden brown sugar (optional)
- Freshly ground pepper
- mixed greens
- 1/2 lb jicama
- 6 large green onions, cut diagonally into thin slices
- 1 med Granny Smith apple, unpeeled, cored and cut into matchstick julienne
Sweet Potato Casserole

Preheat oven to 350. Butter a 9x11 casserole pan and set aside
- Streusel:
- 3 cups firmly packed unseasoned mashed sweet potatoes (about 3lbs)
- 1/2 cup firmly packed light brown sugar
- 1/2 cup fresh orange juice
- 4 T butter, melted
- 2 T fresh lemon juice
- 2 t freshly grated orange zest
- 1/2 t freshly grated nutmeg or 1/4 t ground nutmeg
- 1/4 t ground cinnamon
- 1/4 t ground ginger
- 1/4 t salt, or to taste
- 1/4 t black pepper, or to taste
- 1 cup flour (wondra)
- 1/2 cup maple sugar
- 1/3 cup packed golden brown sugar
- 3/4 t ground cinnamon
- 6 T unsalted butter, melted
Winter Squash Soup with Gruyere Croutons

Soup: Melt butter in large pot over medium heat
- Croutons:
- 1/4 cup butter
- 1 large onion, finely chopped
- 4 large garlic cloves, chopped
- 3 x14 1/2 oz cans low-salt chicken broth
- 4 cups 1-inch pieces peeled butternut squash (about 1 1/2 pounds)
- 4 cups 1-inch pieces peeled acorn squash (about 1 1/2 pounds)
- 1 1/4 teaspoons minced fresh thyme
- 1 1/4 teaspoons minced fresh sage
- 1/4 cup whipping cream
- 2 teaspoons sugar
- 2 tablespoons butter
- 24 1/4 inch think baguette bread slices
- 1 cup grated Gruyere cheese
- 1 teaspoon minced fresh thyme
- 1 teaspoon minced fresh sage
Shrimp Scampi with Green Onions & Orzo

Cook orzo until tender but still firm to bite
- 3/4 cup orzo
- 4 T butter, divided
- 2 T olive oil
- 2 cloves of garlic
- 1 lb uncooked large shrimp
- 4 green onions, thinly sliced
- 1/3 cup dry white wine
Bruschetta Chicken Scaloppini

To make bruschetta, chop tomatoes and finely chop basil and garlic
- Bruschetta:
- 4 chicken breasts
- 1 egg, beaten
- seasoned breadcrumbs
- 1/3 cup grated Parmesan cheese
- 1 lb linguini
- 1/4 cup olive oil
- 3 cloves fresh garlic, finely chopped
- 1 t red pepper flakes
- 6 Roma tomatoes
- 1/3 cup basil, chopped
- 2 cloves fresh chopped garlic
- 1 T olive oil
- 1 t balsamic vinegar
- salt and pepper to taste
