  • 1 T dry mustard, preferably Colman's
  • 1 t ground sage
  • 1 t dried oregano
  • 1/4 sup salt
  • 1 T freshly ground pepper
  • Pan Sauce:
  • 2 t finely chopped garlic
  • 1/2 cup dry white wine or dry vermouth
  • 1/2 cup chicken or beef stock
  • 1 t chopped fresh herbs such as sage, rosemary, thyme, savory, or dill (or 1/2 t dried)
  • salt and pepper to taste
