Melt butter in stock pot over med-high heat
- 3/4 cup butter
- 3/4 cup diced onion
- 1 1/2 cup diced potatoes
- 3/4 cup peeled, diced tomatoes
- 3/4 cup diced carrots
- 3/4 cup dices green beans
- 3/4 cup coarsely chopped broccoli
- 3/4 cup minced leek
- 3/4 cup minced zucchini
- 1 clove garlic, minced
- 1 1/2 teaspoons sugar
- Salt and fresh ground pepper
- 1 1/2 quarts (6 cups) chicken stock
- 1/2 cup whipping cream
- chopped parsley
Chicken Marsala

Season chicken with salt and pepper
- Marsala Sauce:
- 1 lb chicken slices, cut a little more than 1/4 inch thick and pounded to slightly less than 1/4 inch
- salt and pepper
- 1/2 cup flour
- 1 T olive oil
- 1 T unsalted butter
- 2/3 cup dry Marsala wine
- 2 T unsalted butter, softened
- 2 T parsley
Walnut Crusted Halibut

Preheat oven to 450°F. Spray rimmed baking sheet with nonstick spray
- Nonstick vegetable oil spray
- 3/4 cup finely chopped toasted walnuts
- 1/2 cup panko (Japanese breadcrumbs)*
- 1/4 cup (packed) chopped fresh Italian parsley
- 2 tablespoons finely chopped fresh basil
- 2 tablespoons finely chopped fresh chives
- 6 8-ounce halibut fillets (each about 1 inch thick)
- 6 tablespoons butter, melted

- 2 T chili powder
- 1 t dried oregano
- 1 t seasoned salt
- 4oz can diced jalapeños
- 3 C beef broth
- 1 15oz can red kidney beans, rinsed
- 1 15oz can black beans, rinsed
- 1 can pumpkin puree( not pumpkin pie filling)
- 2 14.5oz cans diced tomatoes with juice
- cheese
- plain greek yogurt
- sliced jalapeños
Mexican Wedding Cakes

Bake at 325 for 25 min. Roll in powdered sugar when cooled
- 1 C butter
- 1/2 tsp salt
- 1/2 C powdered sugar

- 1/4 t salt
- 1/2 t baking powder
- 1/2 cup chopped walnuts

Old Fashioned Sugar Cookies

Preheat oven to 400. In large mixing bowl, combine flour, sugar, baking powder and salt
- 3 cups flour
- 1 cup sugar
- 1 1/2 t baking powder
- 1/2 t salt
- 1 cup butter
- 1 egg
- 3 T light cream
- 1 t vanilla
Red Potato Salad

Blend egg yolks, dill, chives, parsley, mayo, yogurt and mustard together in blender
- 2 lbs red potatoes
- 6 hard boiled eggs
- 1 T dill
- 1 T chopped chives
- 1 T chopped parsley
- 2/3 cup mayonnaise
- 2/3 cup plain yogurt
- 1 t dijon mustard
