Turkey Meatloaf with Cranberry Glaze

Preheat oven to 350. Spread brown sugar over bottom of greased loaf pan and spread cranberry sauce over sugar
- 1/4 cup brown sugar
- 1/2 cup mashed cranberry sauce
- 2 pounds ground turkey
- 3/4 cup milk
- 3 eggs, lightly beaten
- 1 1/2 tsp salt
- 1/8 tsp pepper
- 1/4 cup diced red onion
- 1/2 cup chicken broth
Turkey Spinach Meatloaf

Preheat oven to 350. Heat large skillet coated with cooking spray over medium-high heat
- 1 cup finely chopped onion
- 3 garlic cloves, minced
- 1 cup dry breadcrumbs
- 1/2 cup fat free milk
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp pepper
- 4 large egg whites
- 2 pounds ground turkey breast
- 2 (10oz) packages frozen chopped spinach, thawed and drained
- 1/2 cup ketchup
Artichoke and Spinach Dip

Heat oven to 350. In a bowl, mix all ingredients
- 14 oz. canned artichoke hearts, drained and chopped
- 10 oz. frozen spinach, thawed and drained
- 1 cup nonfat or low fat mayonnaise
- 1/2 cup grated Parmesan cheese

- 1/4 c toasted pine nuts (can add more as you like)
