In a large, deep skillet over medium heat, melt butter
- 1/4 cup butter
- 2/3 cup dark brown sugar
- 3 1/2 tablespoons rum
- 1 1/2 teaspoons vanilla extract
- 1/2 teaspoon ground cinnamon
- 3 bananas, peeled and sliced lengthwise and crosswise
- 1/4 cup coarsely chopped walnuts

- 1 cup butter
- 1/2 cup packed brown sugar
- 1 teaspoon vanilla extract
- 3 cups quick cooking oats

- 12 oz salted peanuts, chopped
- 3/4 c chunky peanut butter

Paprika & Parmesan Chicken

Combine Parmesan cheese with breadcrumbs
- 4 boneless skinless chicken breast halves
- 1/2 c. Parmesan cheese
- 1 1/2 c. Italian bread crumbs (you can also use Panko bread crumbs and add Italian seasoning)
- 1 1/2 cubes (3/4 cup) melted butter

How to Make Fruit Leather

1 Rinse the fruit. If you working with stone fruit, take out the pits, chop the fruit
- Fresh fruit (apricots, peaches, plums, berries, apples, pears, grapes)

- Lemon juice
- Sugar (if needed)
- Spices such as cinnamon and nutmeg (optional)
Lasagna Soup

Heat olive oil in a large pot over medium heat
- 2 tsp. olive oil
- 1-1/2 lbs. Italian sausage
- 3 c. chopped onions
- 4 garlic cloves, minced
- 2 tsp. dried oregano
- 1/2 tsp. crushed red pepper flakes
- 2 T. tomato paste
- 1 28-oz. can fire roasted diced tomatoes
- 2 bay leaves
- 6 c. chicken stock
- 8 oz. mafalda or fusilli pasta
- 1/2 c. finely chopped fresh basil leaves
- salt and freshly ground black pepper, to taste
- 8 oz. ricotta
- 1/2 c. grated Parmesan cheese
- 1/4 tsp. salt
- pinch of freshly ground pepper
- 2 c. shredded mozzarella cheese
Parmesan Chicken

Preheat oven to 450°F. Pat the chicken pieces dry with paper towels
- 1 clove garlic, minced
- 1 stick unsalted butter (1/2 cup or 1/4 pound), melted
- 1 cup dried bread crumbs
- 1/3 cup grated Parmesan cheese (or 2/3 cup if you are using a Microplane zester)
- 2 Tbsp chopped fresh parsley
- 1/4 teaspoon salt
- 1/4 teaspoon garlic salt
- A large pinch of Italian seasoning (herb mix)
- 1/8 teaspoon ground black pepper
- 2 lbs of skinless, boneless, chicken meat, cut into pieces no larger than 2x2 inches
Roasted Garlic Chicken

- 1/2 cup roasted garlic cloves
- 2 cups water
- 1 Tbsp salt
- 1/2 teaspoon freshly ground black pepper
- 1 Tbsp olive oil
