Fiesta Dressing

- 1 cup (8 ounces) plain yogurt
- 3 tablespoons minced onion
- 1 ‑1/2 tablespoons fresh lime juice
- 1 clove garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/4 teaspoon salt

In a small mixing bowl, whisk together flour, baking soda, and salt until well combined
- 2 1/2 cups unbleached all-purpose flour

Black Bean Soup

- 1 tablespoon canola oil
- 1 small onion, chopped
- 1 tablespoon chili powder
- 1 teaspoon ground cumin

- 3 cups water
- 1/2 cup prepared salsa
- 1/4 teaspoon salt
- 1 tablespoon lime juice
- 4 tablespoons reduced-fat sour cream (optional)

Multi - Grain Waffles

Mix buttermilk and oats in a medium bowl; let stand for 15 minutes
- 2 cups buttermilk
- 1/2 cup old-fashioned rolled oats
- 2/3 cup whole-wheat flour
- 2/3 cup all-purpose flour
- 1/4 cup toasted wheat germ, or cornmeal
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 2 large eggs, lightly beaten
- 1/4 cup packed brown sugar
- 1 tablespoon canola oil
- 2 teaspoons vanilla extract

OVEN ROASTED PORK 'N VEGETABLES

Heat oven to 450 degrees. Spray roasting pan
- 1 1/2 lbs. boneless pork tenderloins
- 1 lb. carrots, cut into 2 inch pieces
- 2 lb. potatoes, cut in half
- 2 onions, cut into wedges
- 2 tbsp. olive oil
- 1/4 tsp. pepper
- 1 tsp. dried sage leaves, crushed
- 2 tsp. dried rosemary leaves, crushed
Creamy Cilantro Dressing

Directions Whisk all ingredients together in a bowl
- 1 cup mayonnaise
- 1/3 cup whole milk
- 4 tablespoons minced fresh cilantro
- 2 teaspoons lime juice
- 1 teaspoon white wine vinegar
- 1 teaspoon sugar
- 1 teaspoon minced fresh garlic
- 1 teaspoon minced fresh onions
- 1/2 teaspoon salt
- 1/8 teaspoon cayenne pepper
- 1/8 teaspoon black pepper
- 1/8 teaspoon ground cumin
Mexican Quinoa Salad

1-Mix the olive oil, apple cider vinegar, cumin, garlic and salt together in a small jar
- This makes a little extra dressing, which we enjoyed on both lettuce and cucumber salads. Yummy!
- 1/2 cup of olive oil
- 1/4 cup of apple cider vinegar
- 1 teaspoon cumin
- 2-3 garlic cloves, peeled and finely minced or put through the garlic press.
- 1 teaspoon sea salt
- half a bunch of cilantro, washed and finely minced.
- 5 cups of cooked quinoa (I used red, but white would be very nice too)
- Corn cut off of 2 corn on the cobs,
- 1 bunch of spinach

- 10 ounces fresh spinach - rinsed, dried and torn into bite-size pieces
- 1 quart strawberries - cleaned, hulled and sliced
- 1/4 cup almonds, blanched and slivered
