Healthy Pumpkin Bread

- 1 cup packed light brown sugar
- 2 large egg whites
- 1 cup pure pumpkin (not pumpkin pie mix)
- 1/4 cup canola oil
- 1/3 cup low-fat plain yogurt
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 3/4 cup whole wheat flour
- 1 1/2 teaspoon(s) baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Peach Shortcakes

- 1 cup plus 2 Tbsp low fat baking mix
- 3 Tbsp granulated sugar, divided
- 1/8 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- 1/3 cup 1% low fat milk
- 1 Tbsp butter, melted
- 2 tsp turbinado sugar
- 3 cups frozen sliced peaches
- 1/4 cup fat free Cool Whip, thawed
Apple Pastries

1. Preheat oven to 375 degrees
- 4 cups Gala or Granny Smith apples, peeled, cored and chopped
- 2 refrigerated pie crusts
- 1/4 cup light brown sugar
- 1 egg, beaten
- 1/4 cup melted butter
- 1 Tbsp lemon juice
- 1 cup heavy cream
- 1 tsp cinnamon
Baked Corn Casserole

In large bowl, combine all ingredients
- 1 (16 oz) can whole kernel corn, drained
- 1 (16 oz) can creamed corn
- 1 cup sour cream
- 1 (8 1/2 oz) box corn muffin mix
- 1 cup butter, melted
- 2 eggs, beaten
- 1 Tbsp sugar
- 1 cup grated Cheddar cheese
Pumpkin Spice Cookies

Heat oven to 375 degrees. With an electric mixer, cream butter and sugar
- 1 cup (2 sticks) butter, at room temp.
- 1 cup sugar
- 1 egg
- 1 cup canned pumpkin puree (from 15 oz can; do not use pumpkin pie filling)
- 1 tsp vanilla
- 2 cups all purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp allspice
- 1 cup chopped walnuts
- 1 cup raisins
Fettuccine with Spinach Pesto

- 12 ounces fettuccine
- Coarse salt and ground pepper
- 1 package (10 ounces) frozen chopped spinach, thawed
- 1/3 cup grated Parmesan cheese, plus more for serving (optional)

- 1 garlic clove
- 1 teaspoon grated zest plus 2 tablespoons juice from 1 lemon

Caramelized Peaches with Vanilla Frozen Yogurt

1/2 cup frozen yogurt, 2 peach halves and 1/2 Tbsp syrup= 4pts
- 1/4 cup packed brown sugar
- 1/4 tsp ground cinnamon
- Cooking spray
- 4 large peaches, halved and pitted
- 1/2 cup plus 2 tsp water, divided
- 2 cups vanilla fat free frozen yogurt
Pepperoni, Macaroni and Cheese "Lasagna Style"

- Salt and freshly ground pepper
- 1 pound lasagna
- Olive oil
- 4 tablespoons butter, plus 1 tablespoon
- 1 teaspoon garlic, minced
- 4 tablespoons all-purpose flour
- 2 1/2 cups half-and-half
- 2 1/2 cups grated Parmigiano-Reggiano, or other good-quality Parmesan
- 4 ounces grated Cheddar
- 8 ounces grated mozzarella
- 1 pound pepperoni, sliced thin
- 1/2 cup fresh bread crumbs
Pico de Gallo Salsa

- 4 Roma tomatoes, diced
- 1 jalapeno pepper, seeded and minced
- 1/2 red onion, diced
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- Kosher salt, to taste
