Lollipop Pudding Pops

1. Put the paper cups in the baking pan
- 10 (3 oz) paper cups
- 8 x8 or 9x9" baking pan
- 10 wooden sticks
- 4 serving size pkgs instant chocolate pudding mix
- Small candies or sprinkles
- 2 1/2 cups chocolate milk
Chicken Satay with Rice

In a medium saucepan, combine chicken broth, soy sauce, peanut butter, sesame oil, and hot sauce
- Peanut Sauce:
- 3 cups reduced-sodium chicken broth
- 2 tablespoons reduced-sodium soy sauce
- 2 tablespoons creamy peanut butter
- 2 teaspoons sesame oil
- 1 teaspoon hot sauce
- Chicken Satay
- 2 cup quick-cooking brown rice, cooked according to package directions
- 1 pound boneless, skinless chicken breasts, cut into thin strips
- Salt and ground black pepper
- 1 tablespoon peanut or olive oil
- 1 cup of the Peanut Sauce
- 2 tablespoons hoisin sauce
- 1 teaspoon hot sauce or to taste

- 3/4 cup grated Parmesan cheese
- 1 envelope Ranch style dressing mix

- 1/2 cup butter, melted
Pappardelle with Lemon, Baby Artichokes, and Asparagus

- 12 ounces uncooked pappardelle (wide ribbon pasta)
- 2 1/4 cups cold water, divided
- 1/4 cup fresh lemon juice (about 2 lemons)
- 24 baby artichokes (about 2 pounds)
- 3 tablespoons extravirgin olive oil, divided
- 1 pound asparagus, trimmed and cut diagonally into (1-inch) pieces
- 2 tablespoons chopped fresh flat-leaf parsley
- 1 tablespoon grated lemon rind
- 1 teaspoon chopped fresh thyme
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
