- 1 tablespoon Essence, recipe follows
- 1 cup all-purpose flour
- Salt and freshly ground black pepper
- 4 pounds oxtails
- 10 bacon slices, chopped
- 2 large onions, chopped
- 2 large carrots, chopped
- 2 large celery stalks, chopped
- 6 garlic cloves, chopped
- 1/4 cup tomato paste
- 4 teaspoons fresh thyme leaves
- 1 (750-ml) bottle dry red wine
- 1 (28-ounce) can chopped Italian tomatoes
- 1 (14 1/2-ounce) can beef broth
Chicken Nuggets with Honey Mustard Dipping Sauce

Preheat the oven to 350 degrees
- Honey Mustard:
- 2 cups crushed sour-cream-and-onion-flavored potato chips
- 1 egg
- 2 tablespoons milk
- 6 chicken breast fillets, cut into 1 1/2-inch cubes
- 1/3 cup butter, melted
- Honey Mustard, recipe follows
- 3/4 cup mayonnaise
- 3 tablespoons honey
- 2 tablespoons yellow mustard
- 1 tablespoon lemon juice or juice from 1/2 lemon
- Horseradish, to taste

- 1 lb. elbow macaroni
- 1 lb. smoked ham "jamon de cocinar"
- 1 can pineapple chunks
- 1/2 red onion pickled
- 1 cup garlic mayonnaise
Frijoles Negros

Cover dry beans with water and let stand covered overnight
- 2 1/2 cups dried black beans
- 9 cups water
- 1 tablespoon olive oil
- 1 1/2 cups chopped onion
- 1 1/2 cups chopped green bell pepper
- 3 cloves garlic, peeled, and mashed with 1 teaspoon salt and 1/2 teaspoon black peppercorns
- Olive oil for sautéing
- 1 teaspoon oregano
- 1 teaspoon ground cumin

- •8 ounces fresh mozzarella, sliced

- 1 1/4 cups sugar
- 1/2 cup water
- Meringue
- 1/2 cup meringue powder
- 1 cup water

- 3 cups (6 sticks) unsalted butter
- 1/2 to 3/4 cup vegetable shortening (optional)
