Throwdown Pumpkin Pie

For the crust: Preheat the oven to 350 degrees F
- Graham Cracker Crust:

- •2 whole eggs
- •2 egg yolks
- •1/4 dark brown sugar
- •1/4 cup granulated sugar
- •3 tablespoons melted unsalted butter
- •1 1/2 cups pumpkin puree
- •1 1/2 cups heavy cream
- •1 1/4 teaspoons ground cinnamon
- •1 teaspoon ground ginger
- •1/2 teaspoon ground nutmeg
- •1/4 teaspoon ground cloves
- •1/2 teaspoon fine salt
- •1/2 vanilla bean, split, seeds scraped and reserved
- •
- •Bourbon-Maple Whipped Cream
- •1 1/4 cups very cold heavy cream
- •1/2 vanilla bean, split, seeds scraped and reserved
- •2 tablespoons Grade B maple syrup
- •1 to 2 tablespoons bourbon (to your taste)
Tender Cheese Bread

Place ingredients in pan in order given for your particular bread machine
- 1-pound cheese loaf
- 7/8 cup buttermilk
- 2 cups King Arthur Unbleached All-Purpose Flour
- 1 teaspoon salt
- 1 tablespoon sugar
- 2/3 cup grated extra-sharp Cheddar cheese
- 3 tablespoons grated Parmesan cheese
- 1 1/2 teaspoons active dry yeast
- 1/3 teaspoon tabasco sauce (optional)
- 1 1/2-pound cheese loaf

- 1 cup (4 oz.) grated extra-sharp Cheddar cheese

1. Heat the oil in a heavy 5-quart pot or Dutch oven over high heat until rippling
- 1/2 cup Achiote Oil
- 1 cup Sofrito
- 3 tablespoons alcaparrado or coarsely
- chopped pimiento-stuffed olives
- 3 tablespoons fine sea or kosher salt
- 1 tablespoon cracked black pepper
- 2 teaspoons ground cumin
- 11/2 pounds smoked pork neck bones
- or smoked turkey wings, or 1 smoked
- ham hock
- 6 cups long-grain rice
- One 13-ounce bag frozen pigeon peas
- or one 15-ounce can pigeon peas,
- drained
- Beef Broth, homemade or
- store-bought and/or water as needed

1. Season chicken with salt and pepper
- 1 lb. boneless, skinless chicken breast
- table salt & ground black pepper
- 2 tbsp. vegetable oil
- 1 medium onion, minced (about 1 cup)
- 3 medium garlic cloves, minced
- 1/4 tsp dried oregano
- 1/8 tsp red pepper flakes
- 8 ounces ziti (about 2 1/2 cups)
- 2 3/4 cups water
- 1 2/3 cups low sodium chicken broth
- 12 ounces broccoli florets (4 cups)
- 1/4 cup oil packed sun dried tomatoes, chopped
- 1/2 heavy cream
- 1 ounce grated Asiago chees (1/2 cup)
- 1 tbsp lemon juice

- 1 1/2-pound Loaf
- 3/4 cup milk
- 1/2 cup water
- 2 tablespoons canola oil (or other vegetable oil)
- 1 1/2 tablespoons honey
- 2 tablespoons raisins
- 2 tablespoons dark brown sugar
- 1 1/2 cups King Arthur Unbleached Special Bread Flour
- 1 1/4 cups King Arthur Traditional Whole Wheat Flour
- 3/4 cup medium rye flour
- 1 1/2 teaspoons medium sea salt
- 2 teaspoons instant yeast

- 4 sole fillets or flounder fillets, each 5 to 6 ounces and 3/8 inch thick, patted dry with paper towels
- 2 tablespoons vegetable oil
- 2 tablespoons unsalted butter , cut into 2 pieces
- Browned Butter
- 4 tablespoons unsalted butter , cut into 4 pieces
- 1 tablespoon chopped fresh parsley leaves
- 1 1/2 tablespoons lemon juice from 1 lemon
- 1 lemon , cut in wedges for serving
