Puerto Rican Beef

I used classic Puerto Rican spices to jazz up our typical ground beef and veggies
- 1 lb ground beef
- 1/2 each of a green, red, and yellow bell pepper, sliced
- 1 white onion sliced
- 3 tbsp extra-virgin olive oil
- 1/2 tbsp ground cumin
- 1 tsp ground coriander
- 1/2 tbsp turmeric powder
- 1 tbsp dried oregano
- pinch of saffron threads (optional)
- sea salt and black pepper to taste
- 1 bunch kale, chopped
- 1/2 cup pimento-stuffed green olives
- 3 sweet potatoes
- 1 ripe avocado
Buffalo Blue Chicken Meatballs

Preheat oven to 400°F Dice up one rib of celery to put into the meatball mixture
- 1 lb. Ground Chicken
- 1/2 Cup Buffalo Wing Sauce - Divided
- 1/4 Cup Blue Cheese Crumbles
- 2 Large Ribs Celery – Divided
- 2 Tbs. Garlic - Minced
- 2 Tbs. Butter
- 1 tsp. Onion Powder
- Salt and Pepper - To Taste
- Garnish (optional): - 2 large green onions – chopped

- 1 tbsp extra virgin olive oil
- 1 white onion, chopped (about 1 1/2 cups)
- 2 large carrots, chopped (about 3/4 cups)
- 2 stalks celery, chopped (about 3/4 cups)
- Sea Salt & Fresh Ground Black Pepper, to taste
- 1 jalapeno pepper, chopped (seeded if you'd like to reduce heat)
- 1 tsp smoked paprika
- 3/4 tsp dried thyme
- 1 lb russet potatoes, peeled and chopped (about 2 1/2 cups)
- 3 cups frozen corn kernels
- 1 cup low-fat milk
- 3/4 lb sea scallops
- 1/2 lb medium shrimp, peeled and deveined
- 3 scallions, while and light green parts, thinly sliced
- Adjust spiciness with jalapeno seeds.

- 1 pound ground pork
- 2 teaspoons sea salt
- 2 teaspoons oregano
- 1/2 teaspoon chipotle powder
- 2 egg yolks
- Cilantro for garnish
- Sauce
- 1 small yellow onion, chopped
- 3 cloves garlic, minced
- 2 cups tomato sauce
- 1 cup beef broth
- 1/4 teaspoon chipotle powder
- 2 tablespoons honey
- 1 teaspoon oregano
- Sea salt and pepper to taste
Dad's Creole Chicken Gumbo

- Stock:
- 3 1/4 - 4 Lbs Chicken Pieces
- 3 Quarts Water
- 2 Outer Stalks Celery, with leaves
- 1 Carrot, cut into thirds
- 1 Medium Onion, quartered
- 1 Bay Leaf
- 1 Tsp Salt
- Gumbo:
- 1/2 Cup Cooking Oil
- 1/2 Cup Flour
- 1 Cup Onions, chopped
- 3/4 Cup Celery, chopped
- 1/2 Cup Green Bell Pepper, chopped
- 1/2 Cup Green Onion, chopped
- 2 Cloves Garlic, pressed
- 1/4 Cup Parsley, chopped
- 1 Bay Leaf
- 3/4 Tsp Thyme
- 1/2 Tsp Marjoram
- 1/2 Tsp Basil
- 1 16 Ounce Can Whole Tomatoes, with juice
- 1 Lb Hot Smoked Sausage, sliced
- 1 Tsp Worcestershire sauce
- Salt
- Black Pepper
- Cayenne Pepper

- 1/3 cup maple syrup
- 1 teaspoon vanilla extract
- 3 eggs
- 1/2 cup almond butter (or other nut/seed butter)
- 1/4 cup coconut flour
- 1 teaspoon instant coffee grounds
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon

Loaded Beef & Bacon Chili

Brown the ground beef, on medium heat in a frying pan- set aside In the meantime, bake the bacon in the oven at 32
- Coconut/olive oil- for cooking veggies
- 2 lbs ground beef
- 8-10 slices of bacon – or more if desired!
- 1 can diced tomatoes- organic (just tomatoes- look at ingredients)
- 1 can crushed tomatoes- same as above
- 2 package mushroom- quartered into chunks
- 3-4 large carrots- coined
- 3 stalks celery – chopped
- 1 large yellow onion- thickly diced
- 3 zucchini- diced into chunks
- 2 red pepper- chopped
- 6 cloves garlic – minced
- 1 tbsp ground smoked chipotle chilies
- loads of chili powder – add and taste – repeat (to reach desired flavour and colour richness)
- fresh cilantro- chopped for garnish
