Preheat the oven to 350 degrees F
- For the Cream Cheese Frosting:
- 2 1/2 cups all-purpose flour
- 1 1/2 cups sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cocoa powder
- 1 1/2 cups vegetable oil
- 1 cup buttermilk, room temperature
- 2 large eggs, room temperature
- 2 tablespoons red food coloring
- 1 teaspoon white distilled vinegar
- 1 teaspoon vanilla extract
- 1 pound cream cheese, softened
- 2 sticks butter, softened
- 1 teaspoon vanilla extract
- 4 cups sifted confectioners' sugar
- Chopped pecans and fresh raspberries or strawberries, for garnish
No Bake Cookies

Combine milk butter, cocoa and sugar; bring to a boil
- 1/2 cup milk
- 1/2 cup butter
- 1/2 cup cocoa
- 2 cup sugar
- 1/2 cup peanut butter
- 1 tsp vanilla
- 3 cups quick cooking oats
“Philly” Cheese Steaks

1. Remove the steak from the freezer, and slice it width-wise (against the grain), as thinly as you can manage
- 1 1/2 pounds (24 ounces) steak (rib eye, eye roll, or flank steak work well), frozen for about an hour before slicing
- 1/2 teaspoon kosher salt, divided
- 4 tablespoons neutral oil (like canola)
- 1 large yellow onion, peeled and diced (optional, sort of)
- 10 ounces white mushrooms, cleaned and sliced thinly (optional)
- 1/2 pound block of cheese (American or provolone work best), sliced thinly
- 4 to 6 crusty rolls, pieces of French bread, or sets of sliced sandwich bread
Meat and Rice Stew

Cut the meat, potato, and carrot into small pieces
- 2/3 cup of meat - turkey, liver, or hamburger are best
- 1/2 cup rice
- 1/2 of a small potato
- pinch of garlic powder
- 1/2 carrot
- 1 cup water

In a mixing bowl, combine sugar, butter, shortening, eggs, baking powder, salt and flavorings
- 3/4 cup sugar
- 1/4 cup each butter and solid vegetable shortening
- 2 eggs
- 3/4 tsp baking powder
- 1/8 tsp salt
- 1/2 tsp each vanilla and almond extract
- 1 1/2 cup flour
- 1/2-3/4 o a 21 oz can cherry pie filing
Gluten-Free Garlic Chicken Lasagna Recipe

Preheat your oven to 350 degrees F
- 2-3 tablespoons extra virgin olive oil
- 1 each: red, green, and yellow bell pepper, cored, diced or sliced thin
- 6-8 cloves garlic, minced
- 1 red onion, diced
- 2 cups frozen chopped spinach, thawed
- 2 cups chopped Portobello mushrooms
- 4 tablespoons balsamic vinegar
- A pinch or two of dried or fresh herbs - basil, thyme, oregano, mint
- Pinches of nutmeg
- Sea salt and ground pepper, to taste
- 1/2 cup gluten-free chicken broth
- 3 chicken breasts, cooked [I simmered mine in chicken broth with several whole cloves of garlic, peeled]
- 3 1/2 - 4 cups homemade marinara sauce (or use a 25.5 oz. jar Muir Glen red pasta sauce thinned with a broth or wine, and a goodly amount of balsamic vinegar)
- 1 box brown rice lasagna noodles, such as Tinkyada Pasta Joy* see Cook's Notes about cooked vs. uncooked
- 15 oz. small curd cottage cheese or ricotta
- 8 oz. cream cheese, softened
- 4 oz. shredded cheddar
- 4 oz. grated Parmesan
- 1 organic egg, lightly beaten
- 1 dash grated nutmeg
- 4 oz. feta or goat cheese for topping- optional
