Red, White and Green Pesto Torte

- Basil Pesto:
- 2 cups fresh basil leaves
- 1 cup freshly grated paremesan cheese
- 1/4 cup pine nuts
- 3 cloves garlic, peeled
- 1/2 cup olive oil
- Sun-Dried Tomato Pesto:
- 1 1/2 cups oil packed sun-dried tomatoes
- 6 medium sized cloves of garlic, peeled
- 1 cup packed fresh basil leaves
- 1 cup freshly grated parmesan cheese
- 1/2 cup olive oil
- 2 tablespoons balsamic vinegar
- Red, White and Green Pesto Torte:
- Basil Pesto (above)
- Sun-Dried Tomato Pesto (above)
- 1- 8 oz package cream cheese, softened
- 4 sticks (1 pound) unsalted butter, softened
- 1 tablespoon Worcestershire sauce
- 1 tablespoon garlic salt
- Fresh basil leaves for garnish

- 2 red Thai chiles, thinly sliced
- 2 garlic cloves, thinly sliced
- 1/4 cup sugar
- 1/2 cup fresh lime juice
- 1/3 cup Asian fish sauce
- 2 tablespoons boiling water
- 1/2 pound medium shrimp, shelled and deveined
- 1/2 pound bay scallops
- 1/2 pound small squid, bodies cut into 1/2-inch rings and tentacles halved
- 3 plum tomatoes, seeded and diced
- 1 cup bean sprouts

Butter a 9 by 12 1/2-inch baking pan
- Crust:
- 1 1/2 cups all-purpose flour
- 3 tablespoons cornstarch
- 1/4 teaspoon fine salt
- 3/4 cup (1 1/2 sticks), unsalted butter, softened
- 1/3 cup sugar
- 6 tablespoons red currant jelly
- Filling:
- 2 large eggs
- 2 large egg yolks
- 1/2 cup sugar
- 1/2 cup sweetened condensed milk
- 1/3 cup all-purpose flour
- Pinch fine salt
- 1 cup freshly squeezed clementine juice, about 6 clementines
- 1 lemon, juiced (4 to 5 tablespoons)
- 2 clementines, zest finely grated (about 2 teaspoons)
