Aloo Ki Tikka (potato patties)

- 2 # cubed red potatoes
- 1/2 ts salt
- 3 slices whole wheat bread, pulsed to make crumbs
- 1 cup green peas
- 1 large red onion
- 2 green chiles, finely chopped
- 3 TBS lemon juice
- 1 TBS coriander
- 1 TBS cumin
- 8 TBS oil

- 1/2 cup butter
- 30 large marshmallow (3 cups)
- 1 1/2 ts green food coloring
- 1 ts vanilla

Black Olive Herb Yeast Loaves

Directions In a 1-cup measure, sprinkle yeast over 2/3 cup lukewarm water
- 1-1/2 tablespoons (about 2 packets) active dry yeast, or 1 tablespoon quick-rising yeast
- 2/3 cup lukewarm water, plus 2-1/2 cups hot (110-115°F) water
- 3 1/2 cups all-purpose flour
- 2 1/2 tablespoons flavorful olive oil, plus more for brushing
- 3 tablespoons sugar
- 3 tablespoons finely chopped fresh chives, or 2 teaspoons dried
- 1-1/4 teaspoons (generous) dried oregano and dried thyme leaves, or 3-1/2 tablespoons finely minced fresh rosemary leaves
- 2-1/4 teaspoons salt
- 3-1/4 cups whole-wheat flour or white whole-wheat flour, plus a little more for dusting
- 2/3 cup well-drained, pitted and finely chopped Niçoise, Kalamata or other very flavorful brined black olives

Tahini Remoulade (Ana Sortun)

Middle Eastern twist on the classic French sauce
- 1 3/4 plain Greek yogurt
- 1 cup tahini at room temp
- 1/4 cup lemon juice
- 1/4 minced cornichons
- 1/4 cupt drained and rinsed small capers
- 2 TBS chopped dill
- 2 pepperoncini - stemmed, seeded and minced
- 2 garlic cloves, minced.

- 1 can chick peas, drained, reserve 1/8 cup of the chick pea liquid
- 1/2 cup fresh squeezed lemon juice
- 1/4 cup tahini
- 1 to 2 cloves garlic

Almond Canoes

Preheat oven to 350°F. Line cookie sheet with parchment
- 1-7 oz box Odense Almond Paste
- 3/4 cup confectionary sugar
- 1 tablespoon and 2 teaspoons all-purpose flour
- 1 large egg room temperature, separated
- 1/2 cup raspberry or apricot jam
- 1 cup thinly sliced almonds
Fennel &: Escarole Stuffing with Pine Nuts

This stuffing is great in a casserole topped with a little Parmesan cheese
- 4 Tbs. olive oil
- 1 1/2 cups chopped onion
- 4 cups chopped fresh fennel
- 2 Tbs. finely chopped garlic
- 1 Tbs. chopped fresh rosemary or 7 tsp. dried
- 1 Tbs. chopped fresh thyme or 7 tsp. dried
- 1 tsp. fennel seeds, lightly crushed
- 1 tsp. salt
- 1 medium head escarole, washed thoroughly and cut into 7 -inch pieces (about 6 cups)
- 1/2 cup dry white wine
- 8 cups stale or lightly toasted 1/2 inch bread cubes, preferably from a chewy sourdough loaf
- 1/2 cup pine nuts, lightly toasted
- 2 tsp. grated lemon zest
- Freshly ground black pepper to taste
