- 2/3 cup sour cream

- 1 tablespoon finely chopped canned chipotle pepper in adobo sauce

- 2 cups (8 oz.) shredded colby-Jack cheese blend
- 1 (4-oz.) can chopped green chiles
- 4 green onions, finely chopped
- 2 jalapeño peppers, seeded and minced

- 12 ounce package semi sweet chocolate chips, plus 1 cup chocolate chips

Strawberry Bread

- 1 cups fresh strawberries, washed and sliced
- 1-1/2 cups self rising flour
- 1 cups white sugar, plus two tablespoons
- 1 tablespoon ground cinnamon (* Some readers felt a tablespoon is too much, if you prefer less, use a teaspoon.)
- 1/2 cups vegetable oil
- 2 eggs, beaten
- 1 cups chopped pecans
Southwest Soup

Brown ground beef. Add onions
- 2 * 2 lbs. ground beef
- 1 * 1 can tomatoes
- 1 * 1 jar med. picante sauce or salsa (thick and chunky)
- 1 * 1 can pinto beans
- 1 * 1 can corn (or frozen)
- 1 * 1 tsp. garlic powder
- 1/2 * 1/2 tsp. cumin
- 1 * 1 tsp. black pepper
Peach Cobler

Preheat oven to 350 degrees
- 4 cups peeled and sliced peaches
- 2 T. lemon juice
- 1/2 cup sugar
- 1/2 t. cinnamon
- 1 cup milk
- 1 cup SELF RISING flour
- 1 cup sugar
- 1 stick butter or margarine
- to add the 1/2 cup sugar to peaches.
Swiss Broccoli Soup

In 2-quart saucepan, saute onion in butter until tender
- 2 * 2 T. minced onions
- 1 * 1 T. butter
- 1 * 1 (12-oz.) jar Heinz home-style chicken gravy
- 1 1/4 * 1 1/4 c. milk
- 1 * 1 c. shredded Swiss cheese
- * Dash salt
- * Dash pepper
- 1 * 1 (10-oz.) pkg. frozen chopped broccoli, cooked and drained
Spinach, Creamed

Wash your spinach well but no need to spin or pat it dry
- 2 pounds baby spinach or 2 1/2 pounds fresh spinach, tough stems discarded
- 1 3/4 cups heavy cream or whole milk, or a mix thereof
- 1 small onion, finely chopped
- 1 small clove garlic, minced (optional)
- 3 tablespoons unsalted butter
- 3 tablespoons all-purpose flour

- For the crust:
- 1 3/4 cups graham cracker crumbs
- 3 tablespoons granulated sugar
- 7 tablespoons butter, melted
- For the cheesecake:
- 2 1/2 pounds (1.14 kg) Cream Cheese, at room temperature
- 1 1/4 cups granulated sugar
- 3 tablespoons lemon zest (from about 4 lemons)*
- 2 teaspoons vanilla extract
- 3 tablespoons cornstarch
- 1/3 cup heavy cream
- 3 eggs
- 2 egg yolks
- 1/2 cup Meyer lemon juice*
- 1 About 1 cup lightly-sweetened whipped cream, optional for garnish
- 4 to 5 lemon slices, halved, optional for garnish
- *If using regular lemons, reduce the zest to 2 tablespoons and the lemon juice to 1/3 cup.
