Kansas City Rib Sauce

Heat oil in a saucepan. Add garlic and sauté until brown
- 1 cup ketchup
- 1/4 cup water
- 1/4 cup vinegar
- 1/4 cup brown sugar
- 3 tablespoons olive oil
- 2 tablespoons paprika
- 1 tablespoon chili powder
- 2 cloves garlic, minced
- 1 teaspoon cayenne

This lemon meringue cupcake makes a fabulous dessert
- 3 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup (2 sticks) unsalted butter, room temperature
- 2 cups sugar
- 4 large eggs, room temperature
- Finely grated zest of 3 lemons (about 3 tablespoons), plus 2 tablespoons fresh lemon juice
- 1 teaspoon pure vanilla extract
- 1 cup buttermilk

Enchilada Sauce

To tone down the sauce for little mouths, omit some of the chiles
- 5 long fresh red chiles
- 1 cup homemade or low-sodium canned chicken stock
- 2 cups water
- 4 large tomatoes
- 1 small poblano pepper
- 1/4 cup extra-virgin olive oil
- 1 white onion, cut into 1/2-inch dice
- 2 scallion, chopped
- 3 cloves garlic, minced
- 1/2 cup tomato paste
- 1 teaspoon ground cumin
- 1 teaspoon fresh oregano, chopped
- 1/2 teaspoon coarse salt
Chicken-and-Sausage Gumbo

- 4 skinned bone-in chicken breasts

- 1 1/4 cups cake flour (not self-rising), sifted
- 3/4 teaspoon baking powder
- 1/2 teaspoon coarse salt
- 1/4 cup milk
- 1 vanilla bean, halved lengthwise, seeds scraped and reserved

- 3 large whole eggs plus 3 egg yolks, room temperature

- 1 can (28 ounces) whole tomatoes in puree
- 1 jalapeno chile (ribs and seeds removed, for less heat), minced
- 2 small onions, chopped
- 3 garlic cloves (2 whole, 1 minced)
- coarse salt and ground pepper
- 1 can (19 ounces) black beans, rinsed and drained
- 1/2 cup yellow cornmeal
- 1 cup shredded pepper Jack cheese
- 1 teaspoon ground cumin
- 4 large poblano chiles, halved lengthwise (stems left intact), ribs and seeds removed
Lowcountry Smothered Pork Chops
