Steak Diana with Curried Pears

Melt butter or margarine in a heavy skillet, add steaks and saute quickly on both sides until brown
- 2 tbs. butter or margarine
- 2 6oz. cube steaks
- 2 tbs. sweet sherry
- 3 tbs. chopped green onions
- 1 tbs. chopped parsley
- 2 oz. can of mushrooms, drained
- 1 tbs. Worcestershire Sauce
- salt and pepper
- 1 fresh pear
- 1/4 cup of crushed pineapple
- 1 tbs. brown sugar
- 1/2 tsp. curry powder
Creamy Cheesecake

Crust: Mix ingredients together, and press into a 10" spring from pan
- Crust:
- 1 1/4 cups of Graham Cracker Crumbs
- 1/4 cup of Splenda
- 3 tbs. butter, melted
- Filling:
- 1 lb. regular cream cheese
- 1 lb. fat free cream cheese
- 1 1/4 cups Splenda, granulated
- 1 1/2 tbs. Lime Juice
- Pinch of salt
- 4 large eggs
Cheesy Chicken Enchiladas

- 2 tbs. butter or margarine
- 1 med. onion, chopped
- 1 clove garlic, chopped
- 1 cup Nacho Cheese Sauce, medium
- 2 cups diced chicken, cooked
- 1/2 cup sour cream
- 1 4 oz. can diced green chiles, drained
- 1/8 tsp. cayenne pepper
- 6 flour tortillas, large size
- Salsa and shredded cheese, cheddar

- 1 can, sweetened condensed milk
- 1 jar of carmel sundae topping
- 1 bag of Heath Bar Crunch
Peanut Brittle

- 2 cups granulated sugar
- 1 cup light corn syrup (Karo clear syrup)
- 1/2 cup water
- 1 cup butter or margarine
- 2 cups raw or roasted peanuts (salted cocktail peanuts).
- 1 tsp. baking soda

- 1 cup Shortening
- 3 eggs
- 1 1/2 cups sugar
- 1 tsp. vanilla
- 3 1/2 cup flour

- 6-7 leaves of fresh Basil
- 3 35 oz. cans of italian tomatoes
- 1 tbs. black pepper
- 1/2 lb. of beef
- 1/2 lb. of pork
- 1 small can of tomato paste
- 2 tbs. salt
Hostess Cupcakes

Make the cupcakes: Position a racj ub the center and preheat oven to 325 degrees
- Cakes:
- 1/2 cup plus 2 Tbs. flour
- 2 1/2 cups Cocoa powder
- 3/4 tsp. Baking soda
- 1/4 tsp. salt
- 1/2 cup, sugar
- 1/2 cup, water
- 3 Tbs. vegetable oil
- 1 1/2 tsp. distilled white vinegar
- 1 tsp. Vanilla extract
- Filling:
- 1 cup, heavy cream
- 6 oz. finely chipped chocolate
- Glaze:
- 3 ox. finely chopped, bittersweet chocolate
- 3 Tbs. boiling water
- 1 Tbs. egg white, at room temp.
- 1 pinch, cream of tartar
- 1/2 cup plus 2-3 Tbs. convectioner's sugar
