Crispy Ranch Chicken

Preheat oven to 350 degrees
- 2 cups of crispy rice cereal
- 1/2 cup grated Parmesan cheese
- 1 envelope (1oz.) ranch salad dressing mix
- 2 egg whites, beaten
- 8 skinless, boneless chichen thighs (about 5 oz. each)

Boil sugar and cream together until it reaches firm ball stage-remove from heat (drop a bit into cold water)
- 1 1/2 cups sugar
- 1 tsp. butter
- 2 cups chopped pecans
- 1/2 cup cream

Hot Artichoke crabmeat dip

Preheat oven to 350 degrees
- 8 oz. pkg. cream cheese
- 1 cup mayonnaise
- 1 garlic clove, pressed
- 1 14 oz. can artichoke hearts in water, drained and chopped
- 1 8 oz. pkg. imitation crabmeat, chopped
- 1/4 cup grated fresh Parmesan cheese
- 1/2 cup thinly sliced green onions with tops
- 1 lemon
- 1/8 tsp. ground black pepper
- 1/3 cup chopped red bell pepper
- additional sliced green onions
Cherry Salad Supreme

Dissolve raspberry gelatin in 1 cup of boiling water; stir in pie filling
- 1 3 oz. pkg. raspberry gelatin
- 1 21 oz. can cherry pie filling
- 1 3 oz. pkg. lemon gelatin
- 1 3 oz. pkg. cream cheese
- 1/3 cup mayonnaise or salad dressing
- 1 8 3/4 oz. can (1 cup) crushed pineapple, undrained

Elegant Buffet - Turkey Casserole

Cook broccoli and rice per pkg
- 1 pkg. (6 oz.) Uncle Ben long grain wild rice
- 1 pkg. (10 oz.) frozen, chopped Broccoli
- 2 cups, cubed ham, chicken or turkey
- 1 can, sliced water chestnuts, drained
- 1 can (4 oz.) mushrooms, drained
- 1 cup sharp cheddar cheese, shredded
- 1 can cream of celery soup
- 1 cup mayonnaise
- 2 tsp. prepared mustard
- 1 tsp. curry powder
- 1/4 cup grated parmesan cheese
Lemon Pound Cake

Adjust oven rack to middle position and heat oven to 350 degrees
- 16 tbs. (2 sticks) unsalted butter, plus 1 tbs., softened,
- for greasiwng the pan
- 1 1/2 cups (6 oz.) cake flour, plus 1 tbs. for dusting

- 1 tbs. baking powder
- 1/2 tsp. salt
- 1 1/4 cups ( 8 3/4 oz.) sugar
- 2 tbs. grated zest plus 2 tbs. juice from 2 med. lemons
- 4 large eggs
- 1 1/2 tsp. vanilla extract
Impossible Buttermilk Pie

- 1 1/2 cups sugar
- 1 cup of buttermilk
- 1/2 cup of Bisquick baking mix
- 1/3 cup of margarine or butter, melted
- 1 tsp. vanilla
- 3 eggs
Crab and Broccoli Casserole

Heat oven to 350 degrees. Cook broccoli according to package directions until barely done
- 1 pkg. frozen broccoli spears
- 2 tbs. butter or margarine
- 2 tbs. finely chopped onion
- 1/2 tsp. salt
- 2 tbs. flour
- 1 cup of milk
- 1 cup of sharp cheddar cheese, shredded
- 1 tbs. lemon juice
- 1/2 lb. cooked crab meat
Cucumber Yogurt Dip

Peel cucumbers and grate into mixing bowl
- 2 Gourmet mini seedless cucumbers
- 1 cup fat-free yogurt, drained
- 1 cup fat-free sour cream
- 1 tsp. lemon juice
- 1 tsp. chopped mixed herbs (parsley, dill, mint, basil)
- Salt
- Pepper
Stuffed Eggplant

Place eggplant in a large calander over a bowl; sprinkle with salt
- 1 medium eggplant (1 lb.) sliced crosswise 1/4 in thick
- 1 tsp. salt
- 6 oz. mozzarella cheese
- 1/2 tsp. active dry yeast
- 1 1/2 cups of warm water
- 2 cups of all-purpose flour, divided
- 1/2 tsp. black pepper
- 4 1/2 tbs. olive oil
- 2 tbs. minced, fresh basil or 1/2 tsp. dried basil
- Vegetable oil
- 1 egg white
