Roasted Pears with Blue Cheese

Preheat oven to 375 degrees
- 3 ripe, but firm Anjou Pears
- 3 Lemons, Juice from the lemons only
- 3 ozs. coarsley crumbled sharp blue cheese such as Stilton
- 1/4 cup dried cranberries
- 1/4 cup walnut halves, toasted and chopped
- 1/2 cup apple cider
- 3 Tbs. Port
- 1/3 cup light brown sugar, lightly packed
- 1/4 cup olive oil
- 6 oz. baby arugula
- Kosher salt
Chicken Veronica

In a bag place flour, papper, salt, paprika and parsley flakes and shake well
- 6 chicken breasts
- 4 tbs. flour
- 1/2 tsp. papper
- 1/2 tsp. salt
- 1/2 tsp. paprika
- parsley flakes
- 1/2 cup, dry, white wine
- 1/3 cup orange juice
- 3 heaping tbs. honey
- 1 large orange, sliced into thin rings with rind on
- 1 cup white grapes

French Bread Appetizers

Melt cheese and butter- fold in stiffly beaten egg whites
- 1 loaf of French Bread
- 3 oz. cream cheese
- 1/4 lb. sharp cheddar cheese
- 1/2 lb. butter or margarine
- 2 egg whites (stiffly beaten)
Hostess Twinkies

Preheat oven to 325 degrees
- Cake:
- A bottle about the size of a Twinkie
- 12 , 12x14 in. pieces of aluminum foil
- Pastry bag
- toothpicks
- 4 egg whites
- 1 16 in. box of golden pound cake mix
- 2/3 cup water
- Nonstick spray
- Filling:
- 2 Tbs. butter
- 1/3 cup veg. shortening
- 1 cup powdered sugar
- 1/4 cup granulated sugar
- 1/3 cup evaporated milk
- 1 tsp. vanilla extract
- 2 drops, lemon extract
Peanut Butter Chews

Pour the mixture over the corn flakes
- Bring to a boil 4 cups sugar
- 4 cups corn syrup
- Stir in-remove from heat
- 4 cups peanut butter
- 1/4 cup butter
- 6 qrts. corn flakes
Chocolate Fudge Pie

Heat oven to 375 degrees. Place the pie plate on a baking sheet
- 1 piecrust, store-bought or homemade, fitted into a 9"
- pie plate
- 6 ozs. semisweet chocolate, chopped, plus more
- shaved for topping
- 1/2 cup (1 stick) unsalted butter
- 3 large eggs
- 1/8 tsp. kosher salt
- 1/2 cup plus 3 tbs. granulated sugar
- 1 1/2 cups of heavy cream

Combine ingredients. Heat well and let batter stand for 2 hours covered in refrigerator
- 1 cup flour
- Pinch of salt
- 2 eggs
- 1 tbls. sugar
- 2 tbls. melted butter
- 1 cup milk
Crunchy Fudge Sandwiches

Melt butterscotch and peanut butter
- 16 oz. butterscotch morsels (1 cup)
- 1/2 cup peanut butter
- 4 cups rice Krispies
- 16 oz. chocolate morsels
- 1/2 cup conf. sugar, sifted
- 2 tbls. margarine
- 1 tbls. water
Sweet and Sour Spareribs+

Bake at 300 degrees, slowly
- Baste Mix:
- 1 lb. of spare ribs per person (fresh not smoked) cut into 1-2 rib portions.
- 2 tbs. water
- 2 tbs. maple syrup
- 4 tbs. soy sauce
