Hearty Potato Soup

In a large skillet, cook potatoes, carrots and celery in water until tender, about 20 minutes
- 6 medium potatoes, peeled and sliced
- 2 carrots, diced
- 6 celery stalks, diced
- 2 quarts water
- 1 onion, chopped
- 6 tbs. butter or margarine
- 6 tbs. all-purpose flour
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 1/2 cups milk

- Mix 1/2 cup soft shortening
- 1 cup sugar
- 1 tsp. lemon peel
- Blend in
- 1 egg
- 2 tbls. milk
- sift together
- 2 cups flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tso. baking soda
Old Fasshsioned Sponge Candy

Combine sugar, corn syrup and vinegar in a large saucepan
- 1 cup sugar
- 1 cup dark brown corn syrup (Karo)
- 1 tbls. white vinegar
- 1 tbls. baking soda
Zucchini Casserole

- 4 cups, sliced zucchini
- 1 med. onion, chopped
- 3 lg. eggs
- 1/2 cup, oil
- 1/2-3/4 cup, grated, sharp cheesee or parmesan cheese
- 1 cup, Bisquick
- 1 tsp. salt
- 1/4 tsp. black pepper
- 1 tsp. oregano
Sangria, typical

Combine wine, brandy and liquer in a pitcher
- 2 bottles of full bodied red wine
- 2 ounces (4 tbs.) brandy
- 2 ounces (4 tbs.) Triple Sec, Cointreau or other orange
- liquer
- 2 tbs. sugar
- 2 oranges, sliced
- 2 limes, sliced
- 4 tbs. of pineapple chunks
- Sparking Water
Cranberry Sauce with Cognac

In a medium saucepan, combine cranberries, cognac, sugar, and orange juice
- 2 cups of fresh or defrosted frozen cranberries
- 3 tbs. Cognac
- 1 cup packed light brown sugar
- 1/4 cup fresh orange juice
- 3 whole allspice berries
- 2 whole cloves
- 4 whole black peppercorns
- 1/2 tsp. crushed red pepper flakes
- Cinnamon Stick (1/2" piece)
Fudge Brownie

Pour mix into greased 13X9" pan
- Mix:
- 3/4 cup cocoa
- 1/2 tsp. baking soda
- Blend in:
- 1/3 cup oil
- 1/2 cup boiling water-stir until thickens.
- Add to above mix:
- 1/3 cup oil
- 2 cups sugar
- 2 eggs
- Stir above until smooth.
- Then add:
- 1 1/3 cups flour
- 1/4 tsp. salt
- 1 tsp. vanilla
- Blend completely.
Frozen Dessert

Mix all and freeze in 9x13" pan
- 8 oz. Cool Whip
- 1 can sweetened cond. milk
- 1/4 cup lemon juice
- 1 cup chopped nuts
- 1 can whole cranberry sauce
- 1 can drained, crushed pineapple
Butterscotch Nut Bread

Mix all ingredients and bake for 1 hour at 350 degrees in greased pan
- 1 egg
- 1 cup of dark brown sugar
- 1 1/2 tbs. shortening (Crisco solid)
- 1/2 tsp. baking soda
- 3/4 tsp. baking powder
- 2 cups of flour
- 1 cup of buttermilk or sour milk
- 1/2 cup of nut meats
- pinch of salt
