Sweet Pickle Relish

April's Recipe
- 6 medium cucumbers
- 3 green or red sweet peppers
- 6 medium onions
- 1/4 c pickling salt
- 3 c sugar
- 2 c cider vinegar
- 2 1/2 t celery seed
- 2 1/2 t mustard seed
- 1/2 t tumeric
Composed Greek Salad

1. Place a bed of lettuce on a large, deep platter
- 4 lg hearts of romaine, torn
- 2 c feta cheese, crumbled
- 2 English cucumbers, quartered
- 2 tomatoes, preferable heirloom, chopped
- 1 green bell pepper, cut into strips
- 1 red bell pepper, cut into strips
- 1 yellow bell pepper, cut into strips
- 1 med red onion, chopped
- Kalamata olives, pitted
- Green olives, pitted
- Anchovies, optional
- Store bought stuffed grape leaves (optional)
- 6 T extra-virgin olive oil
- 3 T balsamic vinegar
- Coarse salt and freshly ground pepper, to taste
Chicken Pasta Salad

Cut cooked chicken into bite-size chunks
- 8 chicken breasts, boiled (6 large is fine)
- 8 c cooked pasta shells (whole box)
- 4 c celery, sliced diagonally
- 1/2 c chopped onion (1/2 large onion)
- 2 (20 oz) cans crushed pineapple, drained
- 2 c mayonnaise
- 2 c Marzetti Coleslaw Dressing
- 3 c cashew nuts
- 6 c mixed red and green grapes
- 4 c chopped green apples--skins on (1 apple=2 cups)
Nut and Pumpkin Loaf

Combine all ingredients. Pour into 2-7x3x2” pans
- 1 1/2 c sugar
- 1/2 c vegetable oil
- 2 eggs
- 1/3 c water
- 1/2 c raisins
- 1/2 c chopped walnuts
- 1 c pumpkin
- 1 3/4 c flour
- 1/4 t baking powder
- 1 t baking soda
- 2 t pumpkin pie spice
- 1 t salt
No-Fuss Focaccia

- 2 tablespoons olive oil (to drizzle into the pan)
- 1 1/2 cups warm water
- 3 tablespoons olive oil (for the dough)
- 1 1/4 teaspoons salt
- 3 1/2 cups King Arthur Unbleached All-Purpose Flour
- 1 tablespoon instant yeast
- 4 teaspoons Pizza Dough Flavor, optional
- 1/4 cup Vermont cheese powder, optional
- Pizza Seasoning, optional
- add grated parmesan cheese & oregano to dough, then add more to top before baking along with chopped rosemary
- use for turkey sandwiches with swiss cheese, lettuce and Italian Mayonnaise recipe.

- 1/2 tsp ground ginger
- 1/2 tsp chili powder
- 1 16 Oz Whole Tomatoes
- 1 Large Onion -- Chopped

- 1 1/2 tsp Salt

- 1 small jalapeno, seeds removed and roughly chopped
- 1 avocado, peeled and pitted
- 1/3 cup cilantro, packed
- 2 garlic cloves, peeled
- 2 tablespoons lime juice
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 teaspoons dry parsley
- 1 teaspoons dry chives
- 1/2 teaspoons dry dill (try less or omit)
- 1/2 teaspoon smoked or regular paprika
- 1/2 teaspoon Worcestershire sauce
- 1 teaspoon white vinegar
- 1/2 cup real mayonnaise
- 1/2 cup sour cream

- 1/3 c butter, melted
- 1/4 onion, minced
- 4 c fresh bread cubes
- 2 cans water chestnuts
- 1/2 c celery, shopped
- 1 t salt
- 1/4 t pepper
- 1 t poultry seasoning

- 2 Tbsp. cold milk
- 1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
- 4 cups fresh strawberries, halved
- 2 pkg. (3.4 oz. each) JELL-O Vanilla Flavor Instant Pudding
