Firecracker Apple Cake w/ Spiced Pecans & Caramel-Chile Glaze

SPICED PECANS: preheat oven to 350 degrees
- SPICED PECANS
- 1 cup pecan halves
- 1 egg white, beaten until foamy
- 2 Tbsp. (packed) brown sugar
- 1/2 tea. cinnamon
- 1/4 tea. cayenne pepper
- CAKE
- 1 1/2 cups flour
- 2 tea. cinnamon
- 2/4 tea. baking soda
- 1/2 tea. nutmeg
- 1 @a. salt
- 1/2 tea. ginger
- 1/4 tea. cayenne pepper
- 3/4 cup vegetable oil
- 3/4 cup (packed) brown sugar
- 1/4 cup sour cream
- 2 eggs
- 1 Tbsp. vanilla
- 1 3/4 cups Granny Smith apples cut into 1/3" cubes (from about one 8 oz. apple)
- CARAMEL-CHILE GLAZE
- 2/3 cup (packed) brown sugar
- 6 Tbsp. half-and-half
- 5 Tbsp. butter
- 4 egg yolks
- 1/2 tea. cayenne pepper
Bread - Pork & Bean Bread

This bread tastes delicious with cream chee3se, butter or honey
- 1 cup raisins
- 1 cup boiling water
- 15 oz. can pork and beans
- 3 eggs, beaten
- 1 cup oil
- 1 tea. vanilla
- 2 cups sugar
- 3 cups flour
- 1/2 t3ea. baking powder
- 1 tea. baking soda
- 1 tea. cinnamon
- 1 cup chopped pecans
Lima Bean Soup

Sort lima beans and rinse, then cover with cold water and soak overnight
- 12 oz. pkg. lima beans
- 1 onion, chopped
- 2 carrots, sliced
- 3 cloves garlic, minced
- 3 potatoes, peeled and cubed
- 8 oz. kielbasa, sliced
- 1 tea. salt
- 1/4 tea. pepper
- 1 tea. dried oregano leaves
- 3 cups beef broth
- 3 cups water
- 1 bay leaf
Gotta-Have-It Garlic Bread

Preheat broiler. In small bowl, mix together all ingredients until well combined
- 1/2 cup softened butter
- 1/4 cup mayonnaise
- 1 Tbsp. minced garlic
- 2 Tbsp. grated parmesan
- 1 tsp. paprika
- 1/4 tsp. onion powder
- 1/4 garlic powder
- pinch black pepper or mexican seasoning
- pinch kosher salt
- 1 lg. load French bread or other favorite (cocktail bread or thick sliced french bread)
Chicken - Honey Chicken Skewers with Grilled-Corn Salad

1. Place twenty 8-inch wooden skewers in water to soak
- 1/2 * 1/2 cup ketchup
- 2 * 2 tablespoons honey
- 1 * 1 tablespoon Worcestershire sauce
- 1 1/2 * 1 1/2 pounds boneless, skinless chicken breasts
- * kosher salt and pepper
- * canola oil, for the grill
- 6 * 6 ears corn, shucked
- 1 * 1 tablespoon unsalted butter, cut into pieces
- 2 * 2 scallions, sliced
Potatoes - Healthy, Simple Au Gratin Potatoes

Preheat oven to 350 degrees
- 2 lb. your favorite potatoes
- 2 Tbsp. sea salt
- 1 Tbsp. granulated garlic
- pepper, to taste
- Dried minced onions or minced fresh onions, to taste
- 3-4 cups shredded cheese (cheddar or marble)
- 1 qt. low fat milk
Cranberry Pear Crisp

In a large bowl, combine sugar and flour; stir in lemon juice
- 1/2 cup sugar
- 2 Tbsp. flour
- 2 Tbsp. lemon juice
- 4 cups sliced peeled fresh pears
- 1 1/2 cups fresh or frozen cranberries
- TOPPING
- 3/4 cup packed brown sugar
- 3/4 cup old-fashioned oats
- 2/3 cup flour
- 6 Tbsp. cold butter
Mason Jars - Salted Caramel Cheesecake

Makes 5 - 8 oz. jars (widemouth, squat jars)
- 2 cups graham cracker crumbs
- 1.2 cup butter,m melted
- 2 Tbsp. sugar
- 2 8 oz. bricks cream cheese, at room temperature
- 1 - 14 oz. can sweet condensed milk
- 1/2 cup fresh lemon juice
- 1 Tbsp. vanilla
- Smuckers Caramel Sauce
- Coarse Salt
Tarragon Mustard Sauce (for chicken or pork)

Remove the cooked chicken or pork from the skillet
- 2/3 cup chicken stock
- 1/3 cup heavy cream
- 2 Tbsp. Dijon mustard
- 2 stems fresh tarragon, leaves removed and chopped
- salt and pepper
Planked Spicy Strip Steaks

Soak planks for 1 hour. Drizzle steaks with oil
- 2 maple grilling planks
- 4 boneless beef top loin steaks (12 oz. each)
- 1 Tbsp. oil
- 3/4 tea. ground coriander
- 3/4 tea. chili powder
- 1/2 ta. ground allspice
- 1/2 tea. cayenne pepper
