In a large skillet, cook beef and onion over medium heat until no longer pink; drain
- 1 lb. lean ground beef
- 1 cup chopped onion
- 1 can (16 oz) kidney beans, rinsed and drained
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (14/5 oz) diced tomatoes in sauce
- 1 cup frozen corn
- 3/4 cup water
- 1 can ( 2 1/4 oz) sliced ripe olives, drained
- 3 tea. chili powder
- 1/2 tea. dried oregano
- 1/2 tea. chipotle hot pepper sauce
- 1/4 tea. garlic powder
- 1/4 tea. ground cumin
- 1 package (16 oz) Velveeta, cubes
Apple Skillet Cake (in cast iron skillet)

Combine flour, 1/2 cup sugar, baking powder, cinnamon, salt and cloves in a medium bowl; set aside
- 3/4 cup flour
- 1 cup sugar, divided
- 1 tea. baking powder
- 1 tea. cinnamon
- 1/4 tea, salt
- 1/4 tea. cloves
- 3 medium baking apples, cored and sliced 1/4" thick
- 1 Tbsp. lemon juice
- 1/3 cup butter
- `/4 cup cold coffee or milk
- 1 egg, beaten

- 1 lb. boneless skinless chicken breasts, cut into 1" pieces
- 1 envelope taco seasoning
- 1 small onion, chopped
- 1 jar (16 oz) salsa, divided
- 2 cups (8 oz) shredded cheddar cheese, divided
- 36 wonton wrappers
- Sour cream, chopped green onions and chopped ripe olives, for garnish
Carmelized French Toast with Cinnamon and Berries
