- 12 oz. semisweet chocolate, chopped
- 1 1/2 cups sugar
- Tbsp. instant espresso powder
- 12 Tbsp. (1 1/2 sticks) butter, at room temperature
- 6 eggs
- 1 tea. vanilla
- 1 Tbsp. confectioners' sugar
Achiote Marinated Chicken

Achiote Recado: break apart the achiote paste in a small bowl and mash with a fork
- Double recipe Achiote Rocado
- 2 oz. achiote paste
- juice from 1 lime
- 1 1/2 Tbsp. white vinegar
- 2 Tbsp. oil
- 1 tea. oregano
- 1/2 tea. cumin
- 1 Tbsp. chipotle adobo sauce from can plus more to taste
- 2 cloves minced garlic
- salt, to taste
- Two 3 1/2 lb. frying chickens, split into halves, backbones removed
- Four 12x14 pieces of grilling foil (or 4 hot bags)
- 1 Tbsp. oil
Tomato & Pecorino Cheese Pudding (4 individual servings)

Preheat oven to 375 degrees
- 1 lb. cherry tomatoes
- 4 Tbsp. snipped fresh chives
- 1/3 cup coarsely grated Pecorino Romano cheese, divided
- 3 eggs
- 3 egg whites
- 2 Tbsp. flour
- 3 Tbsp. sour cream
- 1 1/4 cups 2% milk
- salt and pepper
Cole Slaw with Pecans and Spicy Dressing

- Dressing:
- 1 head napa or savoy cabbage, shredded
- 4 carrots, shredded
- 2 Granny Smith apples, thinly sliced

- 2 cups julienned jicama?
- 1 medium red onion, thinly sliced
- 1 cup pecans, toasted and chopped
- Leaves from 1 bunch fresh mint, for garnish
- 1 tablespoon Dijon mustard
- 1 teaspoon sugar
- 1 teaspoon ground chipotle
- 3/4 cup mayonnaise
- 1 lemon, juiced
- Kosher salt and freshly ground black pepper
Mixed Berry Pie Filling + Hand Pie recipe

Made 6 pints I mashed the berries
- 8 8 8 cups crushed berries
- 2 1/2 2 1/2 1/2 cups sugar
- 2 2 2 cups water
- 3/4 3/4 3/4 cup Clear Jel
- 1 1 1 Tbsp. fresh grated ginger
- 1 1 1 tea., cinnamon
- 1/2 1/2 1/2 tea. nutmeg
- 1/2 1/2 1/2 tea. cloves
- 1/4 1/4 1/4 tea. salt
- 1/2 1/2 1/2 cup orange juice
- HAND PIES
- to 400 to 400 degrees. Line baking sheets with parchment paper.
- 15 9 for 15 minutes or until golden. Cool. Makes 9 hand pies.
Cajun Chickern Pasta

- 1 lb. bow tie or rotini pasta
- 1 1/2 lb. chicken breasts, cut into 2" pieces
- 2 Tbsp. flour
- 2 Tbsp. Cajun seasoning
- 1 Tbsp. cooking oil
- 2 cups whipping cream
- 2 cups shredded Cheddar and Monterey Jack cheese blend (8 oz)
- 1/2 tea. salt
- 3 cups diced seeded tomatoes
- 1/4 cup sliced green onions
- Tabasco, optional
Savory Vegetable Cheese Strata

Heat 1 tea. oil in non-stick skillet and saute onion until softened and beginning to brown, 3-5 minutes
- 2 tea. olive oil
- 1/2 onion, diced (about 1 cup)
- 1 cloves garlic, minced
- 4 oz. mushrooms, sliced (about 1 1/2 cups)
- cooking spray
- 1/2 baguette, cubed (about 2 1/2 cups)
- 4 eggs
- 4 egg whites
- 1 cup milk
- 1/2 Tbsp. Dijon mustard
- 5 oz., broccoli steamed until tender but still firm, cooled and chopped or 1/2 10 oz pkg. frozen broccoli, thawed and chopped
- 1/4 cup grated Parmesan cheese
- 2 oz. mozzarella cheese, shredded (1/2 cup)
- 1/4 cup thinly sliced sun-dried tomatoes (not oil-packed); soaked in hot water until soft, then drained
- 1/2 Tbsp. minced fresh thyme
- 1/4 tea. salt
- 1/4 tea. pepper

- 1/2 cup evaporated milk
- 3/4 cup sugar

- 1/4 cup (1/2 stick) butter, melted
- 1 tea. vanilla
- 1 cup packed brown sugar
- 1/3 cup butter, melted
- 1/2 cup flour
- 1 cup chopped pecans
