Pretzels - Sweet Chipotle Pretzels

Preheat oven to 350 degrees
- 1 egg white
- 1 Tbsp. water
- 1/2 cup packed brown sugar
- 1 12 tea. cinnamon
- 1/4 tea. ground allspice
- 1/4 tea. ground chipotle pepper
- 4 cups minature pretzels
Roast Beef Sandwich with Horseradish Mayonnaise

In a small bowl, mi together horseradish and mayonnaise
- 4 Tbsp. prepared horseradish
- 1/2 cup mayonnaise
- salt
- pepper
- Sandwich rolls
- olive oil
- 1 lb. sliced roast beef
- 1/2 lb. sliced Havarti cheese
- 1/2 red onion, thinly sliced
- 1/2 cup romaine or lettuce
Texas BBQ Beef Sandwiches (slow cooker)

In 3 qt. slow cooker, combine all ingredients except mustard and rolls
- 1 lb. chuck roast, cubed
- 1/2 cup cola
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 jalapeno, minced
- 1/2 cup taco sauce
- 2 Tbsp. mustard
- 4 Kaiser rolls
Acorn Squash - Balsamic w/ chiles and honey

Preheat oven to 400 degrees
- 3 acorn squash, halved and seeded
- 6 Tbsp. olive oil
- 1/4 cup balsamic vinegar
- 3 Tbsp. honey
- 2 Tbsp. minced pepperoncini
- 2 tea. chopped fresh thyme
- 1 tea. salt
Pumpkin Queso Fundido

Preheat the oven to 375 degrees
- 1 2-3 lb. sugar pumpkin
- 8 oz. dried chorizo, diced
- 1 jalapeno, chopped
- 1 4 oz. can chopped green chiles
- 1/2 tea. ground cumin
- 1/4 tea. cayenne pepper
- 3 Tbsp. flour
- 1 1/2 cups chicken broth
- 2 cups shredded mozzarella or Oaxaca cheese
- 1 cup shredded monterey jack cheese
- Tortilla Chips for serving
Pineapple - Grilled

Or combine brown sugar and rum then pour over sliced pineapple rings
- 1 fresh pineapple, peeled, cored and cut into 1" rings
- 1/2 tea. honey
- 3 Tbsp. melted butter
- 1 dash hot sauce
- salt to taste
Dip - Artichoke Dip (slow cooker)

Place chopped artichokes in slow cooker
- 12 oz. jar marinated aritchoke hearts, drained and finely chopped
- 1 cup grated Parmesan cheese
- 2/3 cup sour cream
- 2/3 cup mayonnaise
- 2 tbsp. diced pimento
Pina Colada Bread

Preheat oven to 350 degrees
- 2 1/2 cups flour
- 1/2 cup sugar
- 2 tea. baking powder
- 1/2 tea. baking soda
- 1/2 tea. salt
- 2 eggs
- 1/2 cup Karo Light Corn Syrup
- 1/3 cup corn oil
- 1/4 cup rum
- 1 can (8 oz) crushed pineapple in unsweetened juice, undrained
- 1 cup flaked coconut
Apple Caramel Tartlets (using frozen Phyllo cups)

Arrange phyllo cups on a tray
- 1/2 cup Marzetti old-fashioned caramel dip
- 2 pkgs. frozen phyllo cups (15 per pkg), thawed
- 2 medium Granny Smith apples, peeled, cored and diced into 1/2" pieces
- 1/4 tea. cinnamon
- 1 Tbsp. butter
- 1/2 cup crushed shortbread or sugar cookies
- 1 Tbsp. butter, melted
- Confectioners' sugar

Makes a very large batch - about 60 mini muffins
- 3 cups flour
- 4 tea. baking powder
- 1 1/2 tea. salt
- \1 cup sugar
- 1 tea. cinnamon
- 1 tea. nutmeg
- 1 cup raisins, dried cranberries or chopped nuts
- 1 cup from 1 can (15 oz) Libby's pure pumpkin
- 1/2 cup vegetable oil
- 1 cup milk
- 2 eggs
