Place ancho chilies in a small bowl
- 2 dried ancho chilies
- 1 1/2 lb. tomatillos, husks removed, halved
- 2 medium onions, sliced, divided
- 1 serrano pepper, halved and seeded
- 3 garlic cloves, peeled
- 3 lb. bone-in chicken breast halves, skin removed
- 1 Tbsp. canola oil
- 2 tea. ground cumin, divided
- 1 1/2 tea. chili powder
- 1 tea. pepper
- 1/4 tea. cinnamon
- 2 whole cloves
- 1/2 cup almonds
- 1 oz. unsweetened chocolate, chopped
- 1 Tbsp. lime juice
- 1 tea. salt
- 1 1/2 cup (6 oz) shredded Cheddar-Monterey Jack cheese
- 1/2 cup minced fresh cilantro
Fish Sandwich with Jalapeno Slaw

Put the milk in a medium bowl and season with salt and pepper
- 1 cup milk
- salt and pepper
- 4 5-6 oz. tilapia fillets
- 1 cup stone ground cornmeal
- 2 green onions, thinly sliced
- 1/4 cup mayonnaise
- 2 Tbsp. whole-grain mustard
- 2 Tbsp. chopped pickled jalapenos and 1/2-1 Tbsp. juice from the can
- oil for frying
- 3 cups thinly sliced iceberg lettuce (about 1/2 small head)

Mason Jar Caramel Apple Cake

- 2 cups flour
- 1 1/4 tea. salt
- 1/2 ta. baking powder
- 1 1/2 tea. cinnamon + 1/2 tea
- 3/4 cup butter, room temperature + 1/4 cup
- 1 1/3 cups brown sugar, packed + 2/3 cup
- 2 eggs
- 1/2 tea. vanilla
- 3/4 cup milk
- 1 cup pecan pieces + 1/4 cup for garnish
- 2 apples, peeled, cored and chopped into small pieces
- CARAMEL FROSTING
- 3/4 cup brown sugar, packed
- 1/3 cup half and half
- 1/4 cup butter, melted
- 1/2 tea. vanilla
- 1 3/4 cups confectioners sugar
Jalapeno Poppers - baked

Heat oven to 425 degrees. Line a baking sheet with foil
- 4 oz. cream cheese
- 2 oz. extra-sharp cheddar, finely shredded
- 12 small jalapenos (about 1/2 lb)
- 2 egg whites
- 3/4 cup fine cornmeal (For extra crunch, mix 2 Tbsp. medium cornmeal into the fine meal before coating.)

- guacamole
- 1 cup cream cheese
- 2 cups sour cream
- 1 pkg. taco seasoning mix
- 2 cups shredded sharp cheddar cheese
- 3 cups finely chopped fresh tomatoes

- 1/2 cup black olives, sliced

- 1 lb. fresh Brussels Sprouts, rinsed, trimmed and halved

- 10 slices bacon, cooked, crumbled and divided
- 4 1/2 lg. Yukon gold potatoes (about 12) cut into 1/4" thick slices
- 1 onion, thinly sliced

- 1 1/2 tea., fresh basil, julienned
- 1 1/2 tea. dried oregano
- 1/2 cup red onion, roughly chopped
- 3/4 tea. black peppercorns
- 2 cups cooked elbow macaroni
- 3 cups fresh sliced mushrooms
- 10 cherry tomatoes, halved
- 1 cup red bell peppers, roughly chopped into pieces
- 1 cup green bell peppers, roughly chopped into pieces
- 3/4 cup crumbled feta cheese
- 1 (4 oz) can whole black olives
- 3/4 cup salami, cut into strips

- 1 medium red potato, cubed

- 1 cup 2% milk
- 2 tea. butter
