Heat oil in a saucepan over medium heat
- 2 Tbsp. olive oil
- 1 Tbsp. minced garlic
- 1/2 tea. cumin
- 2 cups dry Uncle Ben's converted rice
- 2 1/4 cups chicken broth
- 1 can (16 oz) tomato sauce
- salt to taste
Pumpkin Perfect Oatmeal Cookies

PREHEAT oven to 375º F BAKE for 10 to 12 minutes or until lightly browned and set in centers
- 1 pkg. (17.5 oz.) oatmeal cookie mix
- 1/2 cup LIBBY'S® 100% Pure Pumpkin
- 3 tablespoons vegetable oil
- 1 large egg
- 1 cup sweetened dried cranberries, raisins or nuts (optional)
Corn Salsa (could also be a salad)

Try it with grilled, charred corn on the cob
- 1 15 oz. can yellow corn, drained
- 1 15 oz. can white Corn, drained
- 1 4 oz. can chopped green chiles, drained
- 1 2/5 oz. can sliced black olives, drained
- 4 green onions, finely chopped
- 2 tomatoes, finely chopped
- 2 jalapeno peppers, seeded and chopped
- 3 Tbsp. white vinegar
- 1/3 cup olive oil
- salt
- 1 Tbsp. finely chopped fresh cilantro
Pineapple Zucchini Bread

In a bowl, combine the eggs, zucchini, oil, pineapple and vanilla
- 3 eggs
- 2 cups finely shredded zucchini
- 1 cup vegetable oil
- 1 can (8 oz) crushed pineapple, drained
- 21 tea. vanilla
- 3 cups flour
- 2 cups sugar
- 2 tea. baking soda
- 1 1/2 tea. cinnamon
- 1 tea. salt
- 3/4 tea. ground nutmeg
- 1/2 tea. baking powder
- 1 cup chopped nuts
- 1 cup raisins
Rhubarb Coconut Dessert

In a large saucepan, combine the rhubarb, sugar, water and food coloring
- 4 cups sliced fresh or frozen rhubarb
- 1 1/2 cups sugar
- 1 1/2 cups water
- 1/8 tea. red food coloring, optional
- 1 pkg. (18 1/4 oz) butter pecan cake mix
- 1 cup flaked coconut
- 1/2 cup chopped pecans
- 1/2 cup butter, melted
- Vanilla (or butter pecan) ice cream, optional
Bacon, Onion and lentil Skillet

Cook bacon until crisp. Remove from pan, reserving 2 tea
- 6 bacon slices
- 1 cup chopped onion
- 1 cup chopped carrot
- 1 cup chopped celery
- 1 tea. chopped fresh thyme
- 6 garlic cloves, minced
- 3 cups chicken broth
- 1 cup lentils
- 1 cup water
- 2 Tbsp. chopped fresh parsley
- 1/4 tea. pepper
Turkey - Chunky Turkey Soup

Yield: 12 servings
- 1 leftover turkey carcass (from a 12-14 lb. turkey)
- 4 1/2 quarts water
- 1 medium onion, quartered
- 1 medium carrot, cut into 2" pieces
- 1 celery rib, cut into 2" pieces
- SOUP
- 2 cups shredded cooked turkey
- 4 celery ribs, chopped
- 2 cups frozen corn
- 2 medium carrots, sliced
- 1 large onion, chopped
- 1 cup uncooked orzo pasta
- 2 Tbsp. minced fresh parsley
- 4 tea. chicken bouillon granules
- 1 tea. salt
- 1/2 tea. cumin
- 1/2 tea. pepper
Southwest Chicken Pastry Wraps

Heat oven to 375 degrees. Lightly spray 2 baking sheets with the cooking spray
- Cooking spray
- 1 Tbsp. vegetable oil
- 1 medium green pepper, chopped (about 3/4 cup)
- 1 medium red onion, sliced
- 1 Tbsp. chili powder
- 3 cups cube cooked chicken (or substitute 2 - 12/5 oz. each - cans White Chunk Chicken Breast in Water, drained)
- 1 pkg. (17.3 oz) puff pastry sheets, thawed
- 2 cups shredded Cheddar cheese (about 8 oz)
- 1 egg, beaten
- jalapeno peppers, salsa and sour cream (optional)
Cranberry & Apple Cake

Preheat oven to 325 degrees Combine cranberries, apple, brown sugar, orange zest, orange juice and 1 tea
- 12 oz. fresh cranberries, rinsed and picked over
- 1 Granny Smith apple, peeled, cored and diced
- 1/2 cup brown sugar, lightly packed
- 1 Tbsp. grated orange zest
- 1/4 cup freshly squeezed orange juice
- 1 1/8 tea. ground cinnamon, divided
- 2 eggs, at room temperature
- 1 cup plus 1 Tbsp. sugar
- 1 stick butter, melted and slightly cooled
- 1 tea. vanilla
- 1/4 cup sour cream
- 1 cup flour
- 1/4 tea. salt
Pumpkin - Grilled (or squash)

Heat grill to high. Yes, that was quite intentional
- 1 1/2 lb. fresh pumpkin (or squash), seeds and fibers removed, peeled, cut into 1" wedges (about 3 cups)
- 2 Tbsp. olive oil
- 1 Tbsp. balsamic vinegar
- 1 tea. oregano
- 1/2 tea. salt
- pepper
- for added flavor: add some rosemary, sage or thyme to the oil mixture
