- 5 cups chopped strawberries
- 1/4 cup lemon juice
- 1 Tbsp. cider vinegar
- 1/4 cup finely chopped habanero
- 1 pack pectin
- 1/2 Tbsp. butter (used as an antifoaming agent
- 7 cups sugar
Salmon - Citrus Spiced Glazed Salmon

Line a baking sheet with foil; grease foil
- 4 salmon fillets (6 oz. each)
- 2 Tbsp. orange marmalade
- 1 Tbsp. soy sauce
- 1/4 tea. Chinese 5 Spice
- 1/8 tea. salt
- 1/8 tea. ground ginger
Pumpkin Butter - Spiced Freezer Pumpkin Butter

In a 5 qt. heavy pot, combine pumpkin, maple syrup, apple juice, lemon juice, ginger, cinnamon, nutmeg, and salt
- 2 - 15 oz. cans pumpkin
- 1 1/4 cups maple syrup
- 1/2 cup apple juice
- 2 Tbsp. lemon juice
- 1 tea. ground ginger
- 1/2 tea. cinnamon
- 1/2 tea. nutmeg
- 1/4 tea. salt
aDressing: Jalapeno Jelly Vinaigrette

Whisk together first 6 ingredients in a bowl
- 1/4 cup jalapeno jelly
- 3 Tbsp. white wine vinegar
- 2 Tbsp. fresh lime juice
- 1/2 tea. salt
- 1/4 tea. freshly ground pepper
- 1 garlic clove, minced
- 1/3 cup olive oil
Salmon - Broiled Sweet & Spicy

Heat broiler. In a small bowl, whisk together the jelly, soy sauce and ginger
- 1/4 tea. pepper
- 1/4 cup red pepper jelly
- 1 Tbsp. soy sauce
- 2 tea. freshly grated ginger
- 1 1/4 lb. skinless salmon fillet, cut into 4 pieces
Chile Cheese Cubes

In a large mixing bowl, beat eggs until light (4-5 minutes)
- 8 eggs
- 1/2 cup flour
- 1 tea. baking powder
- 3/4 tea. salt
- 1 (12 oz) pkg. grated Monterey Jack cheese
- 1 1/2 cups small curd cottage cheese
- 2 (4 oz) cans mild green chiles,drained, seeded and chopped
Jalapeno Jam (like Marley's)

Bring all to a boil. Reduce heat, simmer uncovered 25-30 minutes or until thick
- 1 extra large yellow onion
- 2 medium red onions
- 3/4 cup brown sugar
- 2/3 cup cider vinegar
- 1/2 cup basalmic vinegar
- 1/4 cup sugar
- 4 jalapenos
- 2 tea. canning salt
Cranberry Sauce, quick made

In a large bowl, mix all ingredients
- 2 cans (14 oz each) whole berry cranberry sauce
- 1 jar (12 oz.) orange marmalade
- 2 tea. orange juice
- 1 tea. cinnamon
- 1 tea. nutmeg
- 1/2 tea. cloves
Chicken over Asian Spiced Ramen Noodles

In a small bowl, combine the brown sugar, peanut butter, soy sauce, and garlic; set aside
- 1/2 cup packed brown sugar
- 1/4 cup creamy peanut butter
- 1/4 cup soy sauce
- 1 tea. minced garlic
- 1/2 cup dry bread crumbs
- 3 pkgs (3 oz each) chicken ramen noodles
- 4 boneless, skinless chicken breast halves (5 oz each)
- 1 Tbsp. olive oil
- 1 can (14 oz) bean sprouts, drained
Wild Rice with Cranberries and Caramelized Onions

Combine chickern broth and both rices in a medium saucepan
- 2 cups chicken broth
- 1/2 cup brown rice
- 1/2 cupo wild rice
- 3 Tbsp. butter
- 3 med. onions, sliced in thin wedges
- 2 tea. brown sugar
- 1 cup dried cranberries
- 1/2 tea. finely grated orange zest
