Sweet Potatoes - Sweet and Spicy

Preheat oven to 425 degrees
- 2-3 large sweet potatoes (or yams), peeled and cubed
- 2 tablespoons olive oil
- 1-2 tablespoons packed brown sugar
- 1/2-1 teaspoon cinnamon
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon poultry, steak, or fajita seasoning
- 1/2 teaspoon chili powder
- 1 pinch cayenne pepper
Cranberry Raspberry Jam

Makes 6 half pints
- 2 pkgs. (10 oz., each) frozen sweetened raspberries, thawed
- 4 cups fresh or frozen cranberries
- 1 pkg. (1 3/4 oz) powdered fruit pectin
- 5 cups sugar
Cajun Potatoes and Andouille Sausage (in foil packet)

In a large saucepan cook potatoes and onion, covered, in enough lightly salted boiling water to cover for 5 minutes...
- 1 lb. tiny new red potatoes, quartered
- 1 small onion, cut into 8 wedges
- 1 medium yellow or red sweet pepper, seeded, cut into bite-size strips (3/4 cup)
- 4 oz. cooked andouille sausage or other spicy cooked sausage link, cut into bite-size pieces (1 cup)
- 2 cloves garlic, minced
- 2 Tbsp. beer
- 2 tea. honey
- 1/2 tea. dried thyme, crushed, or 1 tea. fresh
- 1/2 tea. smoked paprika
- 1/4 tea. salt
- 1/4 tea. pepper
- 1/89 tea. cayenne
Tilapia - Baked with Ritz Cracker Crumbs

Thaw fish if frozen. Rinse fish; pat dry with paper towels
- 4 tilapia fillets (about 1 1/2 lb)
- 18 round crackers (such as Ritz)
- 1/4 cup grated Parmesan cheese
- 3 Tbsp. olive oil
- 3/4 tea. basil
- 2 Tbsp. Dijon mustard
- 1/4 tea. salt
- 1/4 tea. pepper
- lemon wedges
- tartar sauce
Roasted Red Pepper Basil Spread

Place cream cheese spread in blender; set aside
- 1 tub (12 oz) cream cheese spread
- 1/4 cup lightly packed fresh basil leaves
- 1 clove garlic, peeled
- 1/4 cup drained roasted red peppers
- 5 pitted black olives, chopped
Skillet Poached Huevos Rancheros

In large skillet, combine salsa and beans
- 16 oz. jar salsa
- 15 oz. can black beans
- 4 eggs
- salt & pepper
- 2 scallions
- 1/4 cup chopped fresh cilantro
- 4 small flour tortillas
- 1/2 cup sour cream
Marinade - Jack Daniels

Combine ingredients and mix well
- 1/2 cup pineapple juice
- 3 Tbsp. soy sauce
- 1 1/2 tea. ginger
- 1/2 tea. garlic powder
- 1/4 cup Jack Daniel's Whiskey
Tater Tot Casserole

1. I usually cut the tater tots in half, but this is totally optional
- 1 bag of Tater Tots (thawed)
- 1 cup melted butter
- 1 can of cream of mushroom soup
- 8 ounces sour cream
- 1 large onion, chopped
- 12 0unces of grated cheddar cheese
- 1 tablespoon of pepper
- salt to taste (or maybe seasoning salt or cajun seasoning)
- 1 small bag of sour cream and onion chips
Deviled Ham Sandwich Spread

Combine all in food processor and pulse until fairly smooth
- 4 cups (1 lb) cubed ham (not honey roasted)
- 1/2 cup plus 2 Tbsp. mayonnaise
- 1 Tbsp. Dijon mustard
- 1/4 tea. pepper
- 1 cup shredded Cheddar cheese (optional)
Fruit Juice Jelly

Makes 5 half pints
- 4 cups cranberry juice *not low-calorie) or unsweetened apple, grape or orange juice
- 1/4 cup bottled lemon juice
- 1 (1.75 oz) package regular powdered fruit pectin
- 4 1/2 cups sugar
