Cajun Mac and Cheese - 2

Preheat over to 350 degrees
- 3 cups dried tri-colored or plain elbow macaroni (12 oz)
- 2 cups shredded cheddar cheese (8 ozx)
- 4 oz. American cheese, cubes
- 34 cup choppedf onion
- 2 Tbsp. minced garlic
- 2 Tbsp. butter
- 1/2 cup sliced green onion
- 1 cup choipped green and/or red peppers
- 1 - 12 oz. can evaportaed milk
- 2 eggs, slightly beaten
- 2 Tbsp. flour
- 2 tea. yellow mustard
- 2 te. bottled hot pepper sauce
- 1/2 tea. paprika
- 1/2 tea. salt
Scones - Chocolate Chip - Cranberry

Preheat oven to 400 degrees
- 2 cups flour
- 3 Tbsp. brown sugar
- 2 tea. baking powder
- 1 tea. grated orange peel
- 1/2 tea. salt
- 1/2 tea. baking soda
- 1/4 cup cold butter
- 1 cup (8 oz) plain yogurt
- 1 egg yolk
- 1/2 cups dried cranberries
- 1/2 cup semi-sweet chocolate chips
Chuck Roast and Whiskey Butter

Marinade: combine all ingredients except BBQ sauce; mix well
- Whiskey Butter:
- 1/2 cup Jack Daniel's
- 1/2 cup brown sugar
- 1/2 cup soy sauce
- 1/2 cup beef broth
- 1 Tbsp. Worcestershire sauce
- 1 tea. lemon juice
- 1 tea. garlic powder
- 1 medium onion, diced
- 5-7 lb. chuck roast
- 1/2 cup BBQ sauce
- 1/2 cup minced onion
- 2 cloves garlic, smashed
- 1 jalapeno pepper, minced
- 1/2 cup Jack Daniel's
- 1/4 cup Worcestershire sauce
- 1/4 cup apple cider vinegar
- 1 tea. pepper
- 1 tea. dry mustard
- 3 sticks butter

To make self rising flour - to each cup of flour add 1 1/2 tea
- 3 cups self-rising flour
- 1 cup shredded cheddar cheese
- 1 cup sliced jalapenos
- 1/4 cup sugar
- 1 Tbsp. red crushed pepper flakes
- 1 (12 oz)can beer
- 1/2 cup melted butter

In a 1 qt. saucepan, melt butter oven medium heat
- BUTTER PECAN SYRUP
- 2 Tbsp. butter
- 1/3 cup chopped pecans
- 3/4 cup maple syrup
- PANCAKES
- 1 1/4 cups flour
- 3/4 cup cornmeal
- 1/4 cup sugar
- 2 tea. baking powder
- 1/2 tea. salt
- 1 1/3 cups milk
- 1/4 cup vegetable oil
- 1 egg, beaten
Bacon Cheddar Muffins

In a large bowl, combine the biscuit mix, milk, oil and egg just until moistened
- 2 cups biscuit/baking mix
- 2/3 cup 2% milk
- 1/4 cup canola oil
- 1 egg
- 1 cup (4 oz) finely cheddar sharp cheddar cheese
- 8 bacon strips, cooked and crumbed
Apple Pie Liquor

Add all ingredients except Everclear and bring to a boil
- 1 gallon apple cider
- 1 1/2 cups honey
- 1 tea. cloves
- 10-15 cinnamon sticks
- One fifth Everclear
Hot Chile Stix

Makes 1 quart jar
- VEGETABLES
- 3 medium carrots, cut into 3x1/4x1/4" pieces
- 1/4 lb. fresh green beans, trimmed
- 1 red or yellow bell pepper, cut into 1/2" strips
- 2 garlic cloves
- 1 small jalapeno chile pepper, thinly sliced
- PICKLING MIXTURE
- 3/4 cup sugar
- 1 1/2 tea. salt
- 1/2 tea. celery seed
- 1/2 tea. ,mustard seed
- 1/4 tea. ginger
- 1/8 tea. turmeric
- 4 peppercorns
- 1 cup white vinegar
- 3/4 cups water

- 3 cups frozen shredded has brown potatoes
- 3/4 cup shredded Monterey Jack cheese with jalapeno or shredded cheddar cheese
- 1 cup diced cooked ham, cooked breakfast sausage or Canadian-style bacon
- 1/4 cup sliced green onion
- 4 beaten eggs
- 1 1/2 cup milk (or 1 12 oz. can evaporated milk)
- 1/8 tea. salt
- 1/8 tea pepper
