Smoky Fish Chowder

In a large pot, brown chorizo over medium heat (1-2 mins)
- 8 oz. Spanish Chorizo, thin sliced
- 4 leeks, (white & green parts)cut into 1/2 moons
- 1 1/2 lbs. Yukon Gold potatoes (4 med.) cut into 1/2' pieces
- 1 28 oz. can diced tomatoes with juice
- salt and pepper
- 2 lbs. skinless firm white fish, cut into 2" pieces
- 1/2 cup chopped fresh flat leaf parsley
Pumpkin Parfaits

So easy to make you may never go back to pumpkin pie again
- 1 envelope unflavored gelatin
- 1/4 cup cold water
- 1 (15 oz) can pure pumpkin
- 1/2 cup packed light brown sugar
- 1/2 tea. cinnamon
- 1/2 tea, nutmeg
- 1/4 tea., ginger
- 1/8 tea salt
- 2 1/4 cups chilled heavy cream, divided
- 1 1//2 tea. vanilla, divided
- 20 gingersnap cookies, coarsely crushed
Salmon - Orange-Glazed Salmon

1. Combine cajun spices, sugar and salt in a small bowl
- 3 Tablespoons cajun spice
- 1 teaspon brown sugar
- 1/4 teaspoon kosher salt
- 4 boneless, skinless salmon fillets (6 oz each)
- 2 tablespoons vegetable oil
- 1/4 cup Seville orange marmalade
- 1 Tablespoon line juice
Pear-Cherry Bread Pudding

Spray 5-6 qt. slow cooker with nonstick spray
- 1/2 lb. day-old crusty bread, cubed (5 cups)
- 2 large pears, peeled and coarsely chopped (about 3 cups)
- 1/2 cup dried cherries
- 2 cups low-fat (1%) milk
- 1 cup fat-free half-and-half
- 1/2 cup packed brown sugar
- 2 eggs
- 1 egg white
- 1 Tbsp. brandy
- 2 tea. vanilla
- 1 tea. pumpkin pie spice
- 1 Tbsp. confectioners' sugar
Upside Down Cake - Plum with Lemon (cast iron skillet)

Preheat the oven to 375 degrees
- 1 3/4 cups sugar
- 4 plums, cut into 1/2" wedges (about 1 1/4 lb)
- 1 3/4 cups flour
- 1 tea,. baking powder
- 1/2 tea. baking soda
- 1/2 tea. salt
- 1 stick butter, room temperature
- 2 eggs
- 1 tea. vanilla
- 3/4 cup milk
- 1/4 cup sour cream
- 1 1/2 tea. finely grated lemon zest (from 1 lemon)
Breasts - Sriracha Glazed w/ onions

Combine hoisin, ketchup, and Sriracha in a small bowl
- 3 Tbsp. hoisin sauce
- 1 Tbsp. ketchup
- 1 Tbsp. srircha
- 1 1/2 Tbsp. oil
- 1 1/2 cups pre-sliced onion
- 1 Tbsp. minced garlic
- 1 Tbsp. minced ginger
- 1 lb. skinless, boneless chicken breast, cut into 1" slices
aDressing: Sun Dried Tomato Vinaigrette

- /3 cup sundried tomato oil (from the jar)
- 1/3 cup white balsamic vinegar
- 1/2 Tbsp. finely minced sundried toatmoates
- 1 tea. dijon mustard
- 1/4 tea. dried basil
- 1/4 tea., salt

Combine eggs, milk, cream of coconut, sugar and vanilla
- 6 hamburger buns, broken into small pieces
- 6 eggs
- 1 quart milk
- 1/2 cup flaked coconut
- 1/2 can Coco Lopez (cream of coconut)
- 2 cups raisins
- 1 tea. vanilla
- 1 cup sugar
- 1 tea. baking powder
Bread Pudding - Cinnamon-Roll Bread Pudding

- 4-6 cups cubed cinnamon rolls, cut into 1" cubes
- 15 eggs (yes, 15)
- 1 cup sugar
- 1 1/2 tea. vanilla
- 6 cups milk
- 1/2 cup sliced almonds
- 1/2 cup raisins
- cinnamon and sugar combined to taste
- whipped cream or half-and-half
Soup - Sauerkraut Sausage Soup

In a 5 qt. slow cooker, combine all ingredients
- 4 cups chicken broth
- 1 lb. smoked Polish sausage, cut into 1/2" pieces
- 1 can (16 oz) sauerkraut, rinsed and well drained
- 2 cups sliced fresh mushrooms
- 1 1/2 cups cubed peeled potatoes
- 1 can (10 3/4 oz) condensed cream of mushroom soup, undiluted
- 1 1/4 cups chopped onions
- 2 large carrots, sliced
- 2 celery ribs, chopped
- 2 Tbsp. white vinegar
- 2 tea. dill weed
- 1 tea. sugar
- 1/43 tea. pepper
