In a large pot of boiling salted water, cook shrimp until opaque throughout, 4 to 5 minutes
- 2 pounds shell-on large shrimp, shells split up the back and shrimp deveined
- 2 teaspoons unsalted butter, melted
- 2 teaspoons Old Bay seasoning

- 1 cup (2 sticks) butter, softened or cut up into little pieces;

- 5 ounces unsweetened chocolate;
- 1/4 cup instant espresso (or coffee);
- 2 tbsp unsweetened cocoa;
- 1 cup bourbon, rye, or other whiskey;
